I posted a poll on my RU-vid community page asking what you wanted to see most. The top response was for this retro throwback, old school pineapple cheese ball! So here we are today sharing this awesome recipe that is from my youth. Nary a family gathering went by without having this on the table. But over the years it went by the wayside and fell out of favor. I see that this is making a comeback. Much like many of the retro recipes from my childhood. This is a good one to see return.!
You may think that this is going to be sweet, but it is not overly so. Just the right combination of sweet and savory. Pineapple and cream cheese along with bell pepper and some Monterey Jack cheese add in some seasonings and you are good to go! This recipe makes two cheese balls, so you have one to enjoy and one to share, or you can have one on hand for when you get invited to a get together at the last minute! It's always nice to have something like this on hand to take with you!
This really could not be easier. Just mix everything together, form into a couple of balls and roll in nuts. I have used slivered almonds, but you can use pecans or if you don't like nuts roll this in some parsley or some crushed butter crackers for a little something different. You really cannot go wrong with this combination. If you like it spicy, add some Cayenne or some Chipotle powder or even a finely chopped jalapeno to the cheese mixture! You can make this yours by the addition of things you love. I would have added some thinly sliced green onion, but two people in my family would not have touched this so I left them out.
