Pineapple Kesari / Kesari Recipe / Pineapple Kesari Bath / Raji's Kitchen.
This recipe is one of the popular sweet or dessert recipe in India. It is prepared using semolina (Rava), pineapple, ghee and sugar as a main ingredients and are garnished with fried cashew nuts and raisins.
It is popularly known as pineapple kesari, pineapple pudding and pineapple kesari bath.
It is one of the sweet recipe prepared during ceremonies like wedding (marriages) and festivals like Krishna Jayanthi, Diwali, etc. in India.It is also prepared during special occasions such as birthdays and new year.

INGREDIENTS FOR PINEAPPLE RAVA KESARI:
Rava - 1 cup
Sugar - 1 3/4 cups + 1 tbsp
Water - 2 1/2 cups
Pineapple (chopped) - 1 cup
Cashews - 2 tbsp
raisins - 1 tbsp
Yellow food colour - few drops
Ghee - 4 or 5 tbsp
METHOD:
* Take chopped pineapple in a bowl and add 1 tbsp of sugar. Mix well and keep aside. This helps to reduce the soreness in pineapple and enhance the taste.
* Add 2 tbsp of ghee and warm it in medium flame. Add cashew nuts and fry for 1 minute. * * Then add the raisins and fry for another 1 minute. Transfer it to a bowl and keep aside.
* In the same ghee add the rava and roast for 5 minutes in low flame. Transfer it to a plate and keep aside (this helps to avoid discolouration of rava).
* Heat 2 1/2 cups of water in a kadai. When it brings to boil, sim the flame and add the rava slowly with continuous stirring.
* Put the lid and cook the rava in low flame for 2 minutes.
* When the rava is cooked add the sugar and yellow food colour, stir it continuosly without any lumps.
* Add chopped pineapple and mix well.
* Cover and cook in simmer for one minute.
* Open the lid and mix well.
* Add 2 tbsp of ghee and mix well.
* Add pineapple essence and mix well. Stir continuously in low flame until the kesari starts to leave the sides of the pan.
* Garnish with fried cashew nuts and raisins.
*Transfer the tasty, yummy kesari to a plate and serve.
