Pineapple Muffins 凤梨马芬 

Beautifully risen, with a very tender looking crumb. There is a ripe pineapple I have been turning towards my sunny kitchen window for the past four days, to evenly ripen it. I intended to cut it today because I’m pretty sure it is at it’s peak of sweetness and flavor. Then I wake up to find your recipe and I know exactly what I’m going to do with some of that fresh pineapple. I have a feeling the acid from the pineapple reacting with the baking powder is going to yield one heavenly, light, fluffy muffin.
