Ingredients : 1kg Sweet Cheese
6 Eggs
400g Greek Yoghurt
Ready Rolled Puff Pastry ( 2x 320g )
150g Raisins
150g Sugar
2 Sachets Vanilla Sugar ( 2x8g )
Lemon zest from 1 Lemon
2tsp Lemon Extract
1 Egg yolks + 1tbsp milk ( to brush the pie on the top )
2tbspPowdered Sugar ( for dusting )

In a bowl, add sugar, vanilla sugar, eggs , and mix for 1 minute using a whisk. Then add in the yoghurt, lemon zest, lemon extract and continue mixing . Add the raisins , but make sure all excess water is strained out ( I soaked them in a bit of warm water and a teaspoon of rum extract ) .
Mash the cheese using a fork , then add it in the egg filling . Mix everything really well and your pie filling is ready.
Sprinkle a bit of flour on the table and roll out the first pie sheet using a rolling pin , so it's as big as the tray ( I' m using the big tray that comes with the oven ) .Grease the tray with butter and pat it with some flour, then add in the first sheet and all of the cheese filling .
Repeat the process for the second sheet and place it on top of the cheese filling .
Mix the egg yolk with milk and brush the pie on top , then using a knife , cut it in square shapes .
Bake for 40-50 minutes at 180degreesC , or until golden brown. One the pie is fully baked , take it out of the oven and let it cool down really well. Powder it with powdered sugar and serve . Enjoy !
