I'm always so impressed at how John can chat away more coherently, eloquently and without repetition than most people while also carrying out a completely different task. I'd fail to even successfully space out the 5 square divisions while trying to explain something simultaneously!

We plan our production lines to have a flow of raw material input to finished product output, either in one line or in a circle. Avoid long distances or cumbersome work processes. Don't forget to plan space for equipment that is not in use. And as I wrote before: Keep your sales room small! (You may otherwise have to have toilets for the guests - needs a lot of space ...). Almost 300 square meters is very little space for a modern bakery! .... We use internal standards, the mixing department is designed the same on every line, raw materials within arm's length, everything is easy to clean (we are IFS certified). We use mobile and fixable work tables. The raw material store is about 5 meters high and we can use a shelving system with a forklift. If you ever come to Austria I invite you to visit our bakeries!

Second suggestion. I used software to design space for computer rooms, etc. That allowed me to move objects around to achieve efficient use of space. Absent software, you could make scale-size cutouts of equipment (ovens etc.). That could allow you to complete your design without having to redraw every time. Surprising what solutions that might reveal.

I second this. I developed many an electric room using paper cutouts prior to transitioning to doing it exclusively in the BIM software. If nothing else, consider using Sketchup so you can "walk" through the building with the equipment in place.

You should have a Patreon wall, like TWIT did They raised about $50,000 doing it, they sold bricks with peoples names on them that went on the wall it was kind of cool so you could have an oven wall and bricks surrounding that oven

Great to see things moving forward!! I used to do lots of projects like that before retirement. I have 2 suggestions. One, develop a project plan. I used MS Project software, but I'm sure more recent software exists now and may even be free. Enter all your tasks with dependencies and durations. You will be able to see things on the critical path. Things that have to be completed before other things can even start. It will give you a projected completion date even.

Ye but i guess hes not gonna learn software for 1 design buuutttt. You can draw everything to thesame scale and cut them out and reposition on another same scale floor plan?! Maybe that would simulate your simulation software

@@user-yg4dk5vu1q He is talking about project planning, not drawing the design, which Jon is doing in video. Project planning is the biggest "to do liist" you could imagine. They allow you to easily see what hast to be done, in what order and work out priorities. Very, very useful. Drawing software, very different.

Get in touch with some bakeries that are at the scale you are at. There is no reason for you to reinvent the wheel. You should reach out to someone like chad robertson and others to look at your layout. The home bakery has grown organically but now is time for you to expand and be ready for the expansion and that is where another pair of eyes looking at what you do can inform you as to another way to look at the new space vs the old space, plus the fact that you will be adding more equipment as you grow. You need to design a space that allows you to grow into it so you are not creating roadblocks in the beginning.

Sadly your neighbour is just a horrible person, he is selfish. My hope is that you are able to do this and then knock on his door and say "thank you, out of your miserable behaviour has come something wonderful, and help from total strangers to help save our, and other people's lively hoods" Your calmness is amazing. I would have confronted him about his poor behaviour.

Don't short yourself on the utilities side. If you think there is a good chance you will have a new piece of equipment in the future at least route the conduit and piping to it. Conduit is cheap. Moving everything out of the way, cleaning up after installation, lost production time is NOT cheap. Look towards the NEC for special requirements in commercial kitchens. Also make sure you have the required lighting levels at places like prep tables and the sinks. Been caught on that once or twice.

@@aarrkalai4380 PLUS at least 20% space in panels. Always astonishes me when owners VE panels out of a project and then complain there is nowhere to get circuits from in the future. Does you no good if the service can handle it but you have no space to add it.

I so badly want to start my dream business small and sustainably, and let it grow itself, but with the regulations where I live, there is no starting small in the industry I want in on... and it's not even as simple as getting commercial space, I need a minimum of 5 acres of fruiting crops with a processing area on that land with commercial zoning or fifty beehives and a honey processing area on commercial zoned land, which is generally going to involve buying a significant amount of land... I'm glad your plans are coming together, you've really upped my sourdough game, thank you.

Suggestion: Head to your local printing company and have them make about 100 copies of the fixed aspects of the building. That way you can do a ton of iterations without having to re-draw the canvas each time.

Tracing paper is a draftsmans friend. Grab a roll of tissue paper and lay it over the original, lots of iterations without redrawing everything

Hi, to easy you job in dustribute the equipments you have in the new place. Draw in scale all equipment and cut them. After have all of them you can distribute in the sheet representing you new place. Just like a puzzle.

Tip for you guys, the neighbours noticed since they stay home, because of the World Virus , noticed your banging and car come and go ! Before they didn/t notice, because they were working !! When you stay home, like retired people , they notice and complain, all day , nothing to do !! My knowledge , kind regards !!

I faced similar challenges in my business. Along the way I learned two things: one, everything that looked like destruction paved the way for a better business (but that didn't make it any easier to bear at the time). And two, I'm a libertarian. I hear the words of the libertarian mindset throughout this video.

Hi, what do you think is the best method of adding steam to a commercial oven that doesn't have steam injection? I'm going to try in a friend's restaurant tomorrow. My plan is just throwing ice cubes into hot trays.

To watch people bitch and moan about having to move a successful business after obviously breaking the law that was in place and getting caught. A lot of people out there are suffering from the pandemic and dont have the platform to beg for money for a successful business. I hope when ypu get this all open you will help other people for the exact amount you GOFUNDED but i doubt it.

Having a business like this in a residential setting, I can see why your neighbor/s would be upset. The city enforcing the codes to prevent this from happening is no ones fault but the owners of Proof bakery. Then to cry about that someone is pushing you out of business is crazy. As any business person that makes it and is successful, looking back how they come from nothing to making something, why would you ask customers and viewers to support your business in this way by having a go fund me page. There is no way at the end of the day or if you actually survive as a business, how you could look back and be proud that you yourself accomplished success. Seems crazy to me, and i am sure many others but will get backlash by your loyal supporters. This business is not a success in my opinion, your doing things illegal and then asking for others to fund your dreams of having a successful business.

It's pretty clear from your comment that you've spent a good deal of your time watching Proof's videos. I'm left wondering why would you invest so much time in keeping up with the the goings-on of their bakery, given your negative sentiment towards them? I mean these videos aren't exactly short, but hey, it's your time to waste... I'll choose to assume you're here because you enjoy eating/baking bread like most of us, but you just have an odd pet interest (obsession?) in how Proof chooses to run their business. If you intended to provide critical feedback or advice about how to run a business, and you want to be taken seriously, it could help to use a less accusatory and judgemental tone. Better yet, provide a couple suggestions for what they could do differently/better (ex.Have you looked into SBA loans ahead of making a GoFundMe page - here's how to do that? If you think the ordinance is fundamentally wrong, here's how to lobby for it to be changed?). If you came here to throw shade and elicit a reaction from the Proof Bread subs, well then congratulations -you've won the internet! What's next champ?

@@adamjohnson7595 The business is profitable, built from ground up, and was on path to opening retail space. Followed all cottage laws and regulations in AZ with exception of bringing in employees. The city promised them no disruption during covid and 18 months. On a dime they changed it to 4 months. That's why they are fundraising.
