Shore excursion with Norwegian Cruise Line, January 2023
Recipes below are for 4 servings
Devil-style shrimp sopes:
Ingredients:
200g corn flour
20g wheat flour
200g shrimp
200ml tomato purée
50ml (one small can) chipotle peppers (blended)
100g Shredded lettuce
60g Crumbled cheese
100ml heavy cream
Salt and pepper to taste
• In a bowl, add 200 grams of cornflour, 20 grams of wheat flour and a pinch of salt.
• Mix, adding water until you get the consistency of play dough.
• Using your hands, roll dough into 4 small balls.
• Use a tortilla press to give a flat, but not too thin shape.
• Pour one tbsp. olive oil in a pan over low heat, add the dough, flip when cooked, and pinch theedges to create a littlebowl.
For the topping:
• Blend the chipotle peppers until the consistency of a sauce.
• In a small pan, add one tbsp. olive oil and cook the shrimp until they turn pink.
• Add the tomato purée and chipotle sauce (as needed) to the pan with the shrimp.
• Add one tbsp. of heavy cream anda pinch of salt and pepper.
• Stir well and cook until hot.
• Put the shrimp and sauce on the sopes, top with shredded lettuce, cream and crumbled cheese.
Fish fillet with sautéed vegetables and tamarind sauce:
Ingredients:
7oz each Fish fillet (grouper)
50g each tomato, onion, green bell pepper, zucchini, carrots
200ml tamarind syrup
Salt and pepper to taste
Chili powder to taste
• In a pan, add one tbsp. of olive oil and sear the fish on both slides, add salt and pepper to taste.
• Remove fish from the pan and each fillet on a piece of aluminum foil.
• In the same pan, add one tbps. of olive oil and saute the vegetables. Place vegetables over the fish.
• In the same pan, add the tamarind syrup, season with salt, pepper and chili pepper as needed until the sourness and sweetness subside.
• Pour sauce over the fish and vegetables, wrap with the foil paper and bake at 350 °F for 35 min.
Caramelized plantains with chocolate tequila sauce:
2 large plantains
50g butter
100g sugar
30g cinnamon
150g dark chocolate
1/4 cup milk
4 tbsp tequila (optional)
• Halve the plantains across andthen lengthwise; sprinkle flat side with sugar and cinnamon powder to taste.
• Heat butter and sugar in a pan; add plantains flat sidedown and cook for 30 seconds, flip and cook for one minute.
• Remove plantains from the panand place them on a plate.
• In the same pan, add 1/4 cup milk and dark chocolate. Cook, stirring constantly until the chocolate melts and the sauce is smooth. Add tequilla if desired.
• Pour sauce over the plantains and serve.

I think the class started around 10 and finished at noon, but I don’t remember for sure.

By chance did they have non fish option for those with allergies?

Yes. If people did not want fish, then they offered chicken. I don’t remember if there was any other option besides chicken.

Excellent video. When you made the fish before the appetizer how did you keep the fish warm enough to eat? Also, does each person attending get to cook their own meal? Thank you

The fish was baked in foil packets after the skillet step. The workers took our fish away from us and then we didn’t see it again, so they actually finished off the cooking process so I think just a lower heat in the foil packets. Yes, everyone cooked their own meal and they labeled each so we knew which dish belonged to everyone when we finally ate it.
