Bravo to Italians for respecting corn as fit for human consumption, not just as hog feed. And bravo to you for flavoring the polenta. Nearly all recipes cook only water and cornmeal together which turns out bland as can be. I've also seen an alternate oven method that supposedly avoids the endless stovetop stirring. Have you tried this?

Polenta is what you make of it and you can use grits to do the same thing, I use the cooking recipe on the box or bag and add my own stuff to it, the last batch I made, I used butter left over Italian sausage and pork from our last Spaghetti meal, mixed some sauce chopped up the sausage in large pieces , cooked the polenta and then added the meat and sauce to taste, mixed it together and you have a meal. good peasant food. cheap also.

Try using a silicone whisk , since I started using it I never have to worry about lumps and it doesn't burn .

I like to add Roman Pan fried Lamb...but with a Pomodoro is excellent...but as a kid firming it up in the fridge and slice it up...serve it up with syrup and it hit the spot too.

I must say, I love your channel! I just OD'd on it one day whilst at work! I'm definitely going to try this, because I love polenta. What other options can I serve this with? The way you prepared it, is fine with me, but my family is a bit more picky and would want something more!

When did you use the olive oil? Did you forget the drizzle at the end? Love olive oil on my polenta so I was looking forward to see how you used it in your polenta. Disappointed.

You could make toothpicks taste good, omg I’m drooling lol. I agree, more people need to disconnect from all the techy gadgets and learn to look up once in awhile, or the world will pass you by. Great video!

My daughter in law is allergic to all blue cheese. What would I substitute for a great flavor?

You could use any other cheese that's not too hard, and is flavorful but not too salty (Gouda, Cheddar, Provalone, etc.). Something with truffles added would be great! But don't limit yourself to cheese. You could make a pork ragu and add some of that. Spread some of your ragu in the bottom of your bowl or plate, tops with polenta, and then spread some more on top. A beef stock reduction with mushrooms would be great as well.

I've lived in the south my entire life. This dish is the same thing as the grits I've always had with many breakfast.

@@chrisestock5574 kind of. Closer to cornmeal mush than true grits. Grits is from hominy. They don’t turn their corn into hominy first before they make it. Grits is actually more nutritious because of it since hominy is a lot more digestible by people than regular corn.

Polenta really cannot be reheated. Once it cools it hardens and you cannot bring it back to that creamy consistency, but cornmeal is cheap, so just make another one fresh. For your leftovers, just fry the dried polenta in a little oil and you've got a nice, slightly crunchy secondary meal right there.

You said olive oil and pink salt were part of the ingredients you used. I do not see you using any olive oil and the salt that you put in the pot looks white not Himalayan. Of all the polenta recipes I have seen there is never any mention of adding olive oil.
