Nice detailed video- like the colour theory. If you have crumbly clay, you can add mineral oil or petroleum jelly/vaseline to soften it - use the tiniest amount you need and gradually add a little more if needed, this softens it up nicely and will be fine in tiny amounts, but if clay is really hard/crumbly and/or needs to be really strong for thinner pieces that will get some wear like jewellery/keyrings, it could be worth buying clay conditioner as this contains plasticiser whereas mineral oil will dilute the clay slightly as it has no plasticiser which is what makes the clay cure, and could weaken the clay a bit. Many people use it with no problems so worth trying on a small batch to test the hardness after curing. Wish I realised I didn’t need to buy all the colours 🤦♀️ especially if you are a beginner or don’t use it often you don’t want to have loads of clay going hard before you use it up. On storage, some plastics react to the clay over time. Ziplock bags tend to be ok, I saw a video somewhere that told you what to check for to see what type of plastic container you have.

You can chop your hard clay into little bits and add just a few drops of mineral oil (for that black I would start with 3 drops) and toss the clay like a salad and let it sit over night and your clay will become soft.😅 We also need to know exactly what colors of clay your using. Also every brand has the same colors but they are not exactly the same.
