The Pontic lyra is a legendary instrument that carries with it a fascinating tale of mystery and intrigue. It is a three-stringed musical instrument primarily played by those whose origins lie in the Pontus region of northeastern Turkey, as well as those residing in the northern parts of Greece. It is also known as the Kemene and is without a doubt the musical instrument that defines Pontic Greek culture, with a very distinct melody unlike any other instrument.
Pastrourma which means “pressing” in Turkish, is another recipe that came from Konstantinoupoli in the Byzantio. It started as “pasto” placed in salt and then air dried, one form of preserving the meat, and later was covered in spices that gave it a distinctive taste and aroma, mainly from the tsimeni spice, that became a favorite of the Ottoman cuisine. Every Pastrouma maker had his own secret mix, and made with different types of meat with the most popular beef.
