Very good points he makes, I agree cutting corners is never wise, and you should never let down a customer, especially the ones who are and have been with your for a long time. They will notice indeed. Udon is one of my most fav dishes, and one I enjoy making, granted I could never make it from scratch it was really amazing to see the process..

趣味でうどんを打っています。水回し過程でのそぼろの吸水状態、足踏み時の生地の柔らかさや変化の状態、切り分けた際の折り重ねた内層など大変参考になりました。うどん作りの動画はほとんど見ましたが、ここまで密着して撮影している動画はなかったと思います。これだけの量を、毎日、菊揉みして足踏みで作られているのは大変な労力がかかっていると思います。食べる方にもきっと伝わっているのでしょうね。

the dedication and hard work put into this is something you would probably rarely ever see outside of japan... i wonder what the udon taste like, i wish i had the opportunity to try them once, because they have to be so good after this much work and care put into them
