Those burnt ends looked awesome. I did burnt ends for the first time the day after Christmas in 2021 when I had the dreaded C-19 and I couldn't taste a thing. I felt horrible that day and only did half of the pork belly and froze and saved the rest. It was such a waste not being able to taste anything so it was all for not. That was then and this is now. I will definitely have to do it again I can finally have the ability to enjoy what you just enjoyed in this video. I just did those jalapeno poppers last Sunday with pulled pork. Can't go wrong with poppers 🙂
I think I had this on an 8 smoke setting and used a couple hand fulls of wood chips in the first few hours. The meat picks up smoke better when it’s colder so adding the wood chunks early is key!
