In just about four hours, after a smoking session on the Weber Kettle, I had a pan full of Pork Belly Burnt Ends that were used to make some incredibly delicious street tacos topped with a Cilantro Lime Crema.

Hey Ry. Eaten many authentic street tacos on the streets of Mexico. What makes a taco a street taco is not only the size being easy to eat walking around or on the go but the simple ingredients. They are usually made with corn tortillas and things that won't easily spoil like onions and cilantro. The term "Street Taco" has been Americanized greatly. Now the term is used for any small soft taco that can be eaten as you walk around at festivals, fairs, or just on the go. The ones you made look so flavorful and easy to make. I made these today. Needed to cook them about an hour longer to get the tenderness but they turned out very well. Lots of compliments from my guests. This recipe is a hit! The crema is great, too.

Those look AMAZING. Been dying to try a pork belly and this looks like a great start. Here in San Antonio, we eat everything in tacos. This looks like a winna, winna, pork belly dinner.

This is a must try Ry! That sauce sounds and looks incredible! I have a pork belly coming from Matador meats soon, and I'm pretty sure this is what I'm gonna do with it.

Nice video, looked delicious. Pork belly burnt ends tough to beat. I generally use cherry wood and go with brown sugar, butter and honey. I also take the cubes out of the pan and then put the glaze on. Do you reserve the pan drippings? Thanks, enjoyed your video and will try the crema. Gene

We did reserve the juice and were all set to reduce it for sauce, and then we got distracted by eating the tacos and forgot about it. LOL. :)

did you consider not cubing it till after the initial smoke like you do with Brisket Burnt Ends? Would it work that way as well?

You can certainly do it that way, but I wanted to build a bit of a bark on all sides of each piece with that rub, so cubing first made that possible :)

The timing will be the same, temp the same, process the same. All you'd be doing is swapping out the type of cooker :)

How fatty are they after cooking? All belly burnt ends seem way too fatty, but I've never had it

They are definitely fatty, but to me, that's part of the appeal. The fat is rendered so soft by the process that it just melts in your mouth as you savor the meat :)
