Hi, it made me hungry watching! I have the XL Green Egg and always cook my 6-7lb pork butts at 240f for 6-8hrs. I always tent it after the second hour to not get it too charred on the surface and spray it down with apple cider and vinegar every 1.5 hrs to keep it well hydrated!

Roy Hodgson We travel with it in the bed of the truck. It has a cozy spot wedged between a cooler, the side-wall of the truck bed and the tailgate. It has travelled safely that way for more than 3500 miles, so we think it's ok.
No, I don't think you have enough height to do a beer can chicken. But you can certainly roast a chicken, and I personally don't think the beer can thing makes a difference...!
