Almost like an open pit style cook. It amazes me how tender those ribs are in the amount of time it took to cook them. Like you said in the start of the video..."the marbling" I believe it has everything to do with them being so tender along with the rib candy to kinda seal that moisture in. This is why I love your videos...I learn so much. Keep them coming brother....oh yeah...I finally picked some meat up from Lobels.....pricey but well worth it. Cheers brother

We raise the grill when its too hot, we mainly use red oak or just red oak bark. We use garlic salt seasoning on everything.

This style of cooking is,FUN. More work but tending to the grill is the fun of BBQ. The Aroma is what keeps me going on mine. Look great T-Roy.

Forget the “bend test” for rib doneness. Now all the Cool kids are using “the dog test.” Dang those look killer. Great video.

Yes indeed, the dogs were loving those ribs!!! You seriously can't beat the flavor of meat from Lobel's and meat that's cooked on the Santa Maria grill. You'll see next time you visit brother!!! It's good stuff!!!

I have noticed working with my offset that if I split my wood smaller and thinner that it burns cleaner and more efficient than if I just use a large chunk. Eastwing makes a excellent small splitter called the fireside friend. Great job as always

kyridgejumper I have started cooking with wood more and more but always struggled to get my splits the right size using an axe and wedge. Just ordered the fireside friend from my local hardware store. Also, just found a used Santa Maria in my area. I love it when things come together. Thanks for the heads up on the fireside friend.

I've had mine for two years and overall it works good and is worth the price. On the downside the spun iron will rust a little (even if you cover it) which is not a big deal. The two things I don't like is the grate will warp a little and at least on mine the grill slips out of the guide when raised up (I did noticed one weld was more vertical- maybe a Gabby defect) I use it mainly for tri tip and got my money's worth out of it for sure, but I will upgrade on the next Santa Maria setup that I get.

From Santa Maria If able to hold your hand over grates about 3-5 seconds that's your distance from fire Always got great videos Always cook with oak something special about that char

I once did a rack of spares over a camp fire and they came out great and I was worried cause they looked a bit charred. I prefer the long smoke cook to hang out and have a few cold ones while smelling the cook while hanging out.

That's how the ribs were cooked when I was growing up. Over direct heat, only problem, folks back then boiled them first😂They were still good but I didn't have anything to compare them to. Yours look so delicious, all of those flavors you added😍I love that accessory. Thanks for sharing😃

T-Roy! As a guy born close to the Central Coast of Sta Barbara, CA, you done us well. I didn't know there were different grills other than a Santa Maria style. If you are out in SoCal, give me a call and we can grill tri tip on my dad's Santa Maria grill.

T-Roy i cook ribs on my Santa Maria Grill all the time the thing to do is to place a temperature probe on the grill this way you won't burn those ribs and you have a temp to guid buy😁

Man those look good Troy. I will take a rack and a half. More and more I find myself keeping it simple when I cook. Just using salt pepper garlic and onion. Let the meat shine through.

Nice looking ribs Troy ! That Santa Maria set up is intriguing and seems like a great way to do ribs when you don't have time for low and slow. I've reached a point in my weight loss program where I can enjoy some fine BBQ again and have some baby backs smoking on my WSM as we speak.....I can't wait to tear in to them, it's been 2 long months since I've had ribs !! Trying Heaven Made Products Texas Best rib rub for the first time, as well as Rus Jones's bourbon/apple juice spritz. Cheers brother, it's always a pleasure to watch your videos !!

I prefer the open flame taste of ribs as opposed to the closed low and slow smoke method. The grill flavor to me is better than the smoke flavor but to each their own.

Good job Troy, baby backs do cook faster since they're white meat mostly but I prefer the flavor of the spares myself. I love the flavor of the garlic when it chars like that, good stuff.

Great video! This method is sort of similar to the way the Rendezvous in Memphis cooks their ribs. I love that style as well as the low and slow style just depends on my mood and how much time I have. I have a 22.5 WSM so I can cook them either way on it. Love your videos keep’em coming!

What a great looking cook T-Roy, cheers to ya brother. Question, I’ve heard many say that bark on your wood causes bitter smoke, have you ever found this to be the case? I’ve seen plenty of wood bark in your videos and you’ve never complained and your food looks amazing. Cheers.

Hi T-Roy. I’ve been a RU-vid fan of yours for a while now and loving the new theme music you got, its great! Like you (ok copying you!) I have switched out the stock thermometer on my WSM 22.5 with the river country style. Having calibrated it to the top grate temperature the question occurs to me - how often should I check the calibration? please keep on trucking with your BBQ channel, thanks for all you do 👍

Very good job on the ribs T-Roy. It has been a long time since I saw you use any products from Lobel's and was wondering when they would make a comeback. And nice job on the multi-camera angles. That new grill looks to be working wonders. Would definitely love to see some chicken and maybe salmon being cooked on there. Keep it up!!!

Since you are using mainly radiative heat rather than convective heat I the wind shouldn't be able to push the heat over to one side.

question for the Thursday chat..just wondering how it would turn out to put a big chunk of wood in the water pan of the wsm, either by itself or in addition to wood chunks on the briquettes. Maybe it would turn the smoke too acrid, i dunno.

I really like that Santa Maria addon for the weber.. It sure gives a nice result.. Good looking ribs indeed! I hope this will be imported/exported to Europe.. Or i have to make one myself..
