The family-owned Gaytan Foods has been making chicharrones since the early 1900s. Their modern facility was opened in 1935 and still exists in its original location. Chicharrones are pork rinds that have been boiled in oil and seasoned. They are a real treat and Huell learns all you ever wanted to know about them.

It's 4:30 AM, I'm sitting here eating bbq chicharones/pork rinds, googling them to make sure I'm not eating pure death (as if that's ever stopped me), and I decided to see how they make the skin of a pig into airy, crunchy, salty yum yums. Get to this video. Bet 12 year-old me never knew I'd reach this level in life. Couldn't be prouder.

I think the only question is the type of oil. If it was canola or some other industrial seed oil it wouldn't be a good snack. Glad they use lard.

He's not a reporter. Howser is a California icon who had a fascination on life, from the big corporate company, to the little mom and pop shop. He brings these otherwise unknown companies and families into the PBS show for everyone to enjoy. I'd rather watch him be fascinated over the making of a chicharron, than have a presentation by the owner of this company.

Chicharrones and Pork Rinds are NOT THE SAME. Real Chicharrones is from the cut of pork belly which still has meat; about an inch from the skin to the belly, Pork Rinds is skin only.

It’s sad to know that they’re not using gloves to pack the pork rinds. No wonder why people get sick or germs gets passed around. We don’t know if these people wash their hands after using the bathroom, scratching their head, picking their nose or lord knows whatever.
