It's that time of year! Time to fire up your grill of choice and cook up some ribs. Whether you're putting some ribs on the grill or putting bbq ribs in the oven, this is the video that you need to see to help you get those perfectly tender steakhouse fall off the bone ribs that the whole gang craves. This video is ALL about the pork ribs!
You'll get it all with this video. Seth starts by cutting the spare rib off of the pork belly (no bacon today, sorry!), then turns the pork spare ribs into St Louis style ribs. I love watching you all, but those ribs are way overcooked. They look delicious, but were on the edge of being overcooked even before they went into the wrapper. I'm going to pick up some Hollywood to test out on my next rib/pork butt smoke.

They cooked the ribs for a little over 4 hrs all together which is normal rib smoking time.

Agree. Overcooked. It was 4.5 hours plus 20-30 minutes after the sauce was applied to let it "set up." Other BBQ pros show 4 hours max with maybe additional 10 minutes for the sauce to tack up. At the end the meat and bone should hold together, slice and hold together and when you bite you should be able to see your bite mark. Full disclosure - I just did baby backs today and mine also fell apart like his in the video. I used aluminum, too much liquid, and cook time was too long at 4.5 hrs at 275. Still DAMN delish.

I agree but up here in the Midwest if you don't cook it to mush it's undercooked. Fall of the bone is over cooked people! I miss North Carolina sometimes...but not the heat! I had "ribs" in an upscale restaurant here in da U.P. that they were so proud of. It was literally a pile of over cooked mush with a couple of bones sticking out and swimming in sauce. Not even remotely recognizable as ribs.

Amazingly right on point! We've all seen videos from some of the expert chefs. They might know how to cook some things, but it appears they skipped the classes and situations that would teach them how to respectfully interact with anyone else. Gordon Ramsay comes to mind. They make special pliers for skinning fish (like catfish). They are perfect for getting ahold of that membrane to peel it away. Often I’ve found it to be thinner than it looked in the vid and difficult to get rid of. Those skinning pliers make a world of difference.

Just a question: It seems like a lot of energy (fat) is a waste.Why not process them at a lighter weight? About how much of a % edible does a hog carcass produce on average?

Another great vid from the Bearded Butchers!!! As usual I learn something! The cherry on top it seems they are watching my weekend cooks cause I'm cooking ribs this weekend!!! Also I sucked at removing the membrane until you guys taught me the correct way!!! Man! Salt and Pepper only, smoked Pork Lard, spritz w/ ACV. 225*F for first 3 hrs. to get that smoke flavor, 275*F after that to get the meat pullback. Pour on some smoked lard for more pork flavor.Thin BBQ sauce and add that before you remove the ribs. 321 method isn't too cool really bc of the different types of smokers.

321 method? At 250° my ribs are always done in 4ish hours, like super tender, rendered and they stay on the bone... I made it to 3-2 once and they fell apart trying to get them out of the foil. 6hrs for ribs?? 😂😂🤷🏽‍♂️🤦🏽‍♂️

U guys make me jealous with ur Treger grill. I have my very first offset smoker that cost like 150$ on Amazon and it’s so hard, almost impossible to keep the temp set at the correct temp. Because I have to constantly add more wood to it. But thanks for the great video.

Loin meat is different from rib meat (think white meat vs dark meat and connective tissue). Once I bought a rack of baby back ribs at the grocery store and it had an above average amount of loin meat (the situation was made worse by the fact that the loin meat was thick and off to one side rather than a thin evenly distributed layer). After cooking, the loin meat turns out dryer (less juicy) and less desirable.

Awesome video! I haven't yet pulled off a 321 with that kind of cook time and heat though. They always end up just completely falling apart. Then again I'm usually on a commercial level with an Ole hickory instead of a traeger and when I cook for myself it's on a simple weber charcoal kettle. I've stuck with smoking until I can pull the bones out clean then saucing and glazing if I even glaze them 👍

I just ordered me a another knife from you guys. Never had one that sharp and my father-in-law liked it so much he smiled as he drove away with mine. I was wondering in the video it looks like you cooked the entire time meat side up. Is that correct? I hear some say one part meat side down and was wondering. Keep doing what you are doing. Lol no he didn't say "it'll be the worst day of your life with" a chuckle which i caught then went in to actually tell the story from his point of view of how he beat him 3 times in a row then cried uncle each time after that. Ooowww lol brothers are something else lol. But let me tell you something, you winning 3 times in a row only meant that he didn't want to hurt you lol. This is Hands down one of the rawest realest channels on RU-vid. Not many places will people be comfortable and open enough to even let viewers in their inside family jokes. One of our local butchers always has "loin-back baby backs". So thick you can't use a 3-2-1 or 2-2-1, have to use the bend test. A bit more pricey but well worth it. Great video once again.

I've learned so much watching y'all and it always takes me back to childhood since my dad was a butcher. He died when I was young so most of what he showed me I failed to retain except how to sharpen and care for knives. For some reason, sharpening knives is what stuck for all of these years. And I may have said this before but the OG rub is hands down my favorite rub for brisket! Most any cut of beef really but especially brisket. Up until trying that I was always a SPG guy when it came to brisket since I think I tried pretty much everything else out there. But after I ordered the sample pack of rub I decided to try it on a brisket one day and the next day I ordered a tub! There is something about it that takes a brisket to another level! I don't care for sweet on beef so the other rubs I use on pork and chicken. Don't get me wrong, all of your rubs are good and the Black is also very good on beef and I tried it on brisket as well but OG is where it's at in my opinion and pretty much everybody else who's eaten any brisket that I've smoked. Good stuff!

Great tutorial on how to cut, trim, season and cook these bad boys. They look fantastic and sound amazing! ps. In regards to "who would win"... I was surprised to hear the results. In order to judge for ourselves, Im thinking ya'll should post a video of you two throwing down...I know who Im betting on :)

What works in the interim, until you get your seasoning order from the bearded butchers, is a McCormick seasoning blend called "Montreal steak seasoning". They also have it for chicken and pork. Its a great go-to.and its typically sold in all grocery stores in the spice aisle. Happy eating!

@@Treesah35 Thanks and yes we have it for the next time we're in a bind when we try something new. I normally go salt pepper and smoke then sauce for a glaze or sauce on the side. My main focus is perfect smoke flavor. I've owned a Yoder pellet smoker and just never could match the smoke flavor from an offset. I just couldn't taste any smoke...Yoder told me to go take a shower....do a nasal wash....sleep on it...try it in a couple days. With all due respect, I've found...pellets are for rabbits.

@@Steve007362436 i just bought a food dehydrator. (An oster 7 in 1). I want to make beef jerky. The machine comes with instructions on how to use the machine itself, but says nothing about developing a flavor profile for teriyaki flavored beef jerky. Or jerky of any kind. . Would you happen to have any tips or tricks that I could use please? I really want to surprise my husband who works insanely hard 6 days a week outside as an arborist. Any help that you can give me is greatly appreciated; and thank you so much for taking the time to read this.

@@Treesah35 Sure wish I could help out. If I were you I'd google it. You might be surprised, there seems to be a recipe for everything out there. If I had to guess, a store bought teriyaki marinade to start with. Good luck.

@@Treesah35 definitely don’t buy teriyaki marinade. It’s easy to make. I haven’t made jerky either. I also recommend doing some research. I find reading several recipes/methods from different sources let’s me come up with my own technique for pretty much everything I make. But I also read cookbooks for pleasure so I might be a nerd.

I agree, my personal preference Is baby back, baby back, baby back. My kids, who are all grown up will drive hundreds of miles when they known mama is going to be cooking up a mess of ribs withe fried potatoes and fresh coleslaw.

I watched the episode of The Butcher that Seth from bearded butchers was in, and I just don't get how adding a bit of salt to ground wild boar meat is an 'unfinished product'. It would cure the meat a bit, which is good for wild game, and I don't think it would taste bad or be a problem at all. I'd consider doing it myself. Regular TV is dead.

Last time I did ribs I did the Hollywood. They came out unbelieveable. I ordered a few runs from KC that i've used in the past, KC is where my heart is, and that is hands down a better rub. Ribs came out perfect.
