omg ... I love this recipe - the use of the puff pastry as a crust is brilliant !!! but more than the food, I love seeing you spend some quality time with your lovely mom. My mother, at age 93, passed back in 2019 and I miss her terribly so embrace the moments and never hesitate to spend a moment (or two or three) with your mom. My best wishes for all the moms, biological or otherwise, out there ... you are all a great blessing from God !!!
I always make Parmesan twists with leftover puff pastry and freshly grated Parmesan cheese 😍 I was told the green on potatoes is actually poisonous, that’s why I cut it off every time, but have to admit I don’t know if it’s an old wives tale or not…
I love how mama’s fingers are in that dough when he even starts rolling it. She’s watching everything he does with a very keen eye, The way their hands are intertwine you know this is not the first time they’ve cooked together, how wonderful that they have that❤️

Can’t wait to try this with puff pastry instead of pie crust…I add nutmeg to my quiche and for some reason it calls for white pepper, but I love black pepper too so might switch that…also never had the potatoes in it! I can never imagine just tasting one bite of your creations!
Mom always says "quee-shay", it's a word she came across reading a novel quite a few years ago and once, having brunch with her sisters, she's noticed it on the menu. When it was her turn to order, she asked for the quee-shay, which confused everyone for a second, but the waiter, being kind and having noticed where she was peering and pointing to on the menu, simply said, "of course, the quiche is a delicious choice", but my aunt's being the wonderful women they are, couldn't stop giggling over it, not teasingly, but because having grown up poor and without much influence from other cultures, now they could giggle over how they continue to learn and experience life. I threw away a potato chip earlier today that was green! Ha! I always wondered about that too…have heard that forever! I also use a glass of water to put parsley and cilantro in, in the fridge. Just checked out green potatoes on RU-vid and yup they are bad to eat. If just the skins have green spots, peeling is suggested. The green is poisonous.
