There are many varieties of potato bhajis, these are the most common starters and street snacks in India. At home, there were some leftover parboiled potatoes in my fridge, thought this would be the best way to use them.
Ingredients:
Oil for frying
2 medium sized parboiled potatoes
½ cup gram flour/chickpea flour
⅓ cup rice flour
½ tsp turmeric powder
½ tsp chilli powder
1 tsp cumin seeds
½ tsp carom seeds
½ tsp asafoetida
1 tsp finely chopped green chillies
2 tsp fresh coriander leaves
Salt
1 cup water
Mango powder or black salt
Tamarind sauce
