Scarparo Gnocchi is an old fashioned Argentine dish, that over time has become a classic on restaurant menus and at the table of Argentines. It is a rich and creamy quick option for dressing not only gnocchi but also any type of pasta.
INGREDIENTS: (4 servings)
Quick and symple tomato sauce:
500 g of fresh and ripe tomatoes
2 cloves of garlic
3 tablespoons olive oil
1/4 cup (60 ml) vegetable broth
thyme and bay leaf
salt and pepper
Scarparo sauce:
400g heavy whipping cream
100g of bacon
100g of cooked ham
3 green onions (60 gr)
salt and pepper
Potato Gnocchi:
500g floury potatoes
200g of flour
50g Parmesan cheese
PREPARATION:
POTATO GNOCCHI
Boil the potato with its skin and once it is cooked, remove and peel while still hot, then puree until completely smooth.
Sprinkle the flour on the counter and distribute the potatoes on top. Season with salt, pepper and nutmeg. Add egg and the grated parmesan cheese. Work with your hands to integrate the ingredients.
Once the ingredients are combined, take a small portion of the dough and make a rope, and cut the gnocchi evenly and sprinkle with flour. Maken the gnocchi using a gnocchi board or the back of a fork.
SYMPLE TOMATO SAUCE
In a hot pot with olive oil, sweat the garlic cloves, after a few seconds add the chopped tomato, bay leaf and thyme. Add the vegetable broth, season with salt and pepper and cook for 10 minutes.
Reserve.
SCARPARO SAUCE
In a saucepan sauté the pancetta previously cut into strips, once it begins to brown, add the chopped green onions and the ham also cut into strips. Sweat for a few minutes and add the previously made tomato sauce along with the cream. Season with salt and pepper, mix well and let it simmer gently for a few more minutes.
SERVE
In a saucepan with plenty of boiling salted water, cook the gnocchi, when they begin to float remove them and place the gnocchi in the sauce and cook for an additional 30 seconds. Serve immediately.
