For the veggie folks around; I reccomend Edward & Sons Not Chik'n Bouillon cubes. Helps add that bit of savoryness. I'm making Sara Lynn's broccoli soup tonight with it!

My hubby is a type 2 diabetic, and potatoes in quantity are a no-no, but he does most of the cooking these days and has been looking for a recipe like this. I WILL show it to him! I love potato leek soup!

I've cooked this recipe and loved it. I would suggest you sprinkle Parmesan cheese over each serving. It really enhances the flavor of the soup.

I love your cooking, it is always easy to follow and delicious. The last recipe I looked at was for french onion soup in where you used apple cider vinegar, it came out soooo good that I now use acv pretty much on everything I cook and the idea that it's good for you makes it even better.

I made this last year from one of your other videos (I just couldn't find it, but found this) and it froze really nicely. It is so delicious! I also added some parmesan cheese in there and your soup was amazing! I am making a bunch of soups again this week and wanted your leek & potato soup.

This recipe was so easy and so dang delish! The only thing I did differently was to use a blender and then run through a sieve to smooth it out. YUM

You can use a regular blender instead! Just make sure not to overfill it - and use caution since it is very hot.

I have had some recipes call for full fat coconut milk. It comes in a can. Sometimes it's in the Asian aisle. Just make sure it's not the kind in the carton that you drink. This is a solid, like butter.
