Potato Stew with Sausage is one of my all time favorites. Potato Stew and Sausage. Recipe below. I really love this recipe because it serves a lot of people and it is very inexpensive.

Potato Stew with Sausage
Ingredients:
2.5 to 3 pounds of russett potatos diced into 1 inch cubes
2 lbs of smoked sausage cut into 1/4 inch slices
2 tbps of Nunus seasoning (may need extra when seasoning to taste)
1 tbps of vegetable oil
1 large yellow onion chopped
1/2 bellpepper chopped
2 celery stalks chopped
1 tsp parsley (fresh preferred but dried is also an option)
2 cloves of garlic
1. Saute chopped onion, bellpepper, celery, and garlic in the oil.
2. Add sausage and brown the sausage and vegetables over medium high heat until they caramelize (about 15 - 20 minutes depending on stove)
3. Mix in the diced potatos thoroughly
4. Add water until the potatos are completely underwater. Add seasoning and cover to cook.
5. Stirring occasionally, let cook on medium heat for about 60 minutes or until the potatos reach a very soft consistency (as seen in the video)
6. Season to taste. Serve over rice. (see my stove top rice video)

I enjoyed your video, so simple and easy yeah! I picked up 10 lbs of potatoes and will freeze it and have it ready to consume yeah! I am going to add beef broth to mine or I may go with seafood broth! THANKS AGAIN!

CC, man that looks fantastic , I'm gonna cook that today , I may throw in a few purple top turnip roots diced to add another level of flavor , nobody on utube has any videos on cooking with turnip ( roots ) , man there's nothing like some ducks smothered down in turnip roots the Cajun way , you have some good videos , keep up the good work , CG
