Adding the potatoes to the sauce and pouring it in... makes a lot of sense. I have to admit, for years, I have manually layered the potatoes carefully and added the roux, then layered again and again. I'll try your method. Seems a lot easier.

I had to share my comment on your Au Gratin Potatoes. I made this for my Father's Day dinner with Smoked Rib Eye Steaks, Roasted Aparagus, Seared Scallops, Ceasar Salad and Parmesan Cheese Toast. This dish had me wanting to eat nothing but it. It came out perfect. The best I ever had. Your recipes are a much go to before cooking anything. Your instructions are on point and easy to follow and fun too. Did I miss out on your cook book? Must success on all you do and thanks for sharing.

I tried this. Absolutely hated it. The sauce was absolutely amazing. I just don’t like scalloped potatoes apparently. But.. I have to say.. this sauce is versatile. An absolute must have over pasta or mash potatoes. ( for me). Thank you for this. You’re sauce is amazing.

Okay, against the grain, I figured it was going across/against the grain. I could be wrong but along or with the grain follows the meat fibers. That would be in the direction that the meat strands shreads.
