I’ve been on the low carb spectrum for some time & have eliminated grains for brief periods over the last year, but always craved them. I ran my first trail race ever last Saturday (30k of steeps) at 52 & finished in 4.5hrs. Slight soreness in my quads 3 days later, managed a short run yesterday & felt good. A week before the race I eliminated grains b/c I have a surgically repaired knee that can ache especially on steep downhills. I added copious amounts of butter & bone broth to my meals & no cravings. NO knee pain at all on race day. I ate homemade salted banana chips & potato chips fried in bacon grease heavily salted but not until more than 1/2 way thru. Added salt to my electrolytes & sipped straight water. I’ve found in my job (physical outdoor manual labor) that i always feel better the less I eat. So I applied it to running. I’ve probably never eaten enough fat in my life & being female have fought depression & especially fatigue the last 10 yrs after having a kiddo at 42. I skied the day after the race & have more energy this week than I can recall in at least 15 yrs. I just signed up for 2 50k’s this summer. I can attest to everything Jeff is sharing. I figured it out by listening & acutely observing my body. Now to find a sponsor to support my running habit! Thank you for this interview.

@@trailto100 I ended up finishing 3-50k’s in 2.5 months. The last 50k on significantly easier terrain= 6hrs & 8 min. I head to Vegas for 100k in November. So excited to see how that distance feels! Thank you for the kind reply.

This was an AWESOME listen - maybe the best ultra running podcast I have ever listened to. I could write an essay on this but I'm going to stick to a few main points. 1 - The podcasters are amazing! So many podcasters/interviewers have these long winded questions where they ask a question and then kind of answer it before they let their guest talk. These two asked a question quickly and to the point and then let Jeff take it away. I also loved how some of their follow up questions were based on what Jeff said. Really really well done you two. 2 - I 100% agree with what Jeff is saying about food. We evolved over millions of years on a specific diet and then 300 years ago we changed that diet and it's only going further in the wrong direction with every passing year.....and we wonder why we are so unhealthy. 3 - My only questions (and he probably answered this but I missed it) was why he focuses on fruits and limited vegetables. Our ancestors would have been consuming huge amounts of vegetables (I assume) so I would think they are good to go. I love Jeff, I love this POD, I will listen to this a few more times over the next few months. Thank you for this!

With all due respect, much of the nutritional advice is BS... if you want legit dietary advice, maybe check out Layne Norton, Alan Flannagan... like people who actually specialise in the black hole of nutrition... and debunk nearly all of what Saladino spews out.

@@wcomalley Jeff is an outstanding endurance athlete; one of the very best in the ultra space. Imagine the depth and breadth of his training to be of that calibre… could possibly have more to do with his successes than his nutritional advice.
