Not sure if you figured it out, but I ran across the same problem and found a solution. The trigger "when a row is added, modified or deleted" doesn't have the Formatted Values when the choice field is multi-select. However, if it is a single select choice field, then you can use the format triggerBody()?['_xxx_columnname_label'] to get the label values. Otherwise, you need to use a "Get Row by id" action. Then you can use the "xxx_columnname@OData.Community.Display.V1.FormattedValue"
