The ingredients for prawn crackers are prawns, tapioca flour, and some flavours. The dough is rolled out, steamed, and then cut into slices. Raw crackers are traditionally sun-dried before being fried to remove moisture and achieve optimum crispiness.

After they have dried, they are deep-fried in oil, which must be heated to a high temperature before frying, then the crackers will expand and float to the surface.

Homemade Prawn Crackers Recipe | 虾饼食谱 | Resepi Keropok Udang
♦️ Prepare Ingredients 准备材料 (Sediakan bahan-bahan):
- Prawn Meat 虾肉 (Daging Udang) 260g
- Salt 盐 (Garam) 1/2 tbsp
- Caster Sugar 细砂糖 (Gula Halus) 1 tsp
- Pepper 胡椒粉 (Serbuk Lada) 1 tsp
- Chicken Stock 鸡精粉 (Serbuk Ayam) 1/2 tsp
- Tapioca Starch 木薯粉 (Tepung Ubi Kayu) 150g
✅做法:
把虾肉用搅拌机打成泥。加入盐、细砂糖、胡椒粉、鸡精粉和木薯粉拌匀。如果太干可以加点水。揉成面团。放入涂上油的蒸盘中, 以大火蒸四十分钟。
放凉后再放入冰箱冷藏一夜。切成小溥片,放在太阳下晒两天至干。存放在干燥容器中保存起来。
用热油炸至浮上油面,香脆可口。
✅Instructions:
Puree the prawn meat with a blender. Add salt, caster sugar, pepper, chicken stock, tapioca flour and mix well. You can add some water if it is too dry. Knead into dough. Put it in a steaming pan coated with oil and steam for 40 minutes on high heat.
Let it cool and then put it in the refrigerator overnight. Cut into small thin slices and leave to dry under the sun for two days. Store in dry container.
Deep-fried with hot oil until floated to the surface, crispy and delicious.
✅ Cara-cara:
Tumis daging udang dengan pengisar. Masukkan garam, gula halus, serbuk lada, serbuk ayam, tepung ubi kayu dan gaul rata. Anda boleh menambah sedikit air jika terlalu kering. Kacau menjadi doh. Masukkan ke dalam kuali kukus yang dilapisi minyak dan kukus selama 40 minit dengan api yang besar.
