Winter is coming! This wall tent was always supposed to be a two-season accommodation; somehow, the time has already come to prepare it for the plummeting temperatures. We are thinking that with a wood-burning stove we could have friends come to stay for a winter weekend if they are up for a big adventure.
This video also has a little sneak peek of our future build plans :) I can't express how excited I am about the shipping container project and I think it's going to be the perfect spot for us to set up full-time on the land. We have so much more to share about this with you, but I have such a good feeling that, with a lot of love, these containers are going to become our favorite place on earth.

I can almost hear Max talking to his kids about growing up in the kitchen and the smell of apples being cooked down, or bread being made. You're building fantastic memories for him that will be invaluable to him throughout his life.

I'm a long-time viewer, but I never comment on this thing bc my English is not perfect, but, seeing Dana doing her apple sauce reminds me of the time you guys were living in Berlin, in that cozy apartment doing your cooking videos with those out-of-the-park shots (as usual) and now you guys are here, with your new family, Little Max joining his mama on the kitchen and Freja protecting her family. It's just really inspiring to me how you guys keep investing your time and energy in doing what you love! Seeing all the journeys, adventures and growth are so amazing. I love you and admire you guys.

Dana, I make applesauce every year of the apples from our tree. I used to peel my apples, but I discovered over the years that you can actually leave the peels on. This retains so many of the good nutrients found in the peels. Cook on low for several hours or overnight. Then blend. You'll end up with applesauce a lovely shade of pink to burgundy depending upon the type of apples you use

Yes! I have definitely changed to the thought process of Do what you can where you are now. I learned to can this year from my small garden and local produce. Definitely have a goal of land someday with a big garden, but I am happy to do what I can now.

I made apple sauce recently in a pressure cooker and it CHANGED MY LIFE. Idon’t think I’m ever buying store bought apple sauce again. I have dreams of having a tiny house and living on the earth, but for nowwww I gotta do what’s feasible! I can still live off the land and teach women how to heal their bodies even if I’m still living at my parents house to get things going. Also, chunky apple sauce is IT! You can use an air compressor to blow air through the water lines to clear them out - it can be super tricky to get the gravity drain perfect.

Yesss, such familiar thoughts about the applesaucephilosophy. I was soooo happy you identified and gave a name to that whole process. Very recognizable indeed. I just only started adressing that and changed careers totally, went back to school to follow my path. My kid was very happy, most friends are encouraging ( that is why they are your friends ;) ) and I leave the others to it. For years I have been wanting to spend the holidays away and once again waited for others to conform to their plans. Then I heard myself announce I was going away and inviting those who wanted to come with me. Applesauce is what a home stands for. A home guarded by Frida or the home of your heart, your mind. Shg sacred and valuable, shg your son later will simply call roots, with a big smile.

That is wonderful! My husband and I want to do van life too and it took us 5 years to get the funds and we finally have it now. I wish we would've done more of what you're doing in between. Although we did spend a lot of time in nature and our mindset towards life has totally changed. Now we have the funds but we still have to clear out our apartment and find the right van and build the beginnings of an interior. We really need to push ourselves aside from everything else that we have going on in life. But as soon as we have insulation, electricity and a bed we plan to move in. We don't need anything fancy. I can really recommend starting to live life like you would in your van dream life. And I believe you will get there! The financial part is just one part of it. Although I know it can feel like it's everything.

It is hard to get out of the waiting mindset, and to just do... I find myself waiting for the right time to accomplish something, when if you just start, regardless of where or what you think it should be, you'll end up happy with what was done.... Hey guys you could use winterization procedures that we use on RVs. We use a compressor to blow all the water out of the lines and put in non toxic Rv marine antifreeze.

As an extra precaution for the mice, Irish Sping soap keeps them away! When we winterize our cars we put Irish Spring throughout the car and it keeps the mice from nesting and potentially damaging anything!

@@WildWeRoam uhhhhh, it DOESN'T always!!! I am a member of the vintage travel trailer enthusiast community and that is a highly disputed method. Basically, results run the gamut ... some people put Irish Spring in their trailers when they store them and no critters come in at all ... others do it and post pictures of the Irish Spring soap with little mouse nibbles all around it. People also recommend "Fresh Cab," a "natural" deterrent (very mixed results), fabric softener sheets (a lot of times the mice just seem to use them as bedding) or using peppermint (soaking cotton balls in peppermint oil really does seem to deter the little jerks!). What really worked for ME was to use tulle and make little mothball "sachets" that seemed to make my trailer inhospitable to mice. I put a sachet on each tire (4 of them - I have a 1967 Streamline Prince), on the tongue of the trailer and anywhere the mice could gain access. Of course, this was all on the outside of the trailer as you probably don't want to use mothballs inside! Basically, what usually works, which is something you really can't do --- is to plug up all the holes where they can get in with steel wool and encase it in spray foam ... they won't chew thru steel wool or to put screen on any vents or holes. With a tent that's not really possible. You have done a good job "winterproofing" by removing food and any soft goods (mattresses, blankets, towels, clothing) they can chew up to make bedding. Best of luck on your projects and I can't wait to see what you guys do next.

Good for you on putting up applesauce.If you have any orchards near you can also buy fruit to put up as well.. I planted some pear trees two years ago and I got a good harvest this year. Not enough to can pears but to make some Pear Butter I will be going to a orchard or the farmers market to get a box of pears to can.

I have loved so much watching the life y'all are building together, but I wanted to especially comment on the "making excuses because it's not the right environment" thing as I find myself doing that all the time with homesteading type things (like learning how to use a sewing machine to make my own clothes, learning how can things etc), when in reality (as you said) if I get started on building those skills now they can only continue to grow when the pieces are also in place!

It would really be best to take the tent cover off and if needed tarp things that need to be protected from the weather if they are going to stay there. it can be a lot of work to constantly be pushing snow off the roof of a tent, especially if there is melting and icing in layers (as in common in upper NY) and the weight can destroy the expensive cover in a single storm. When the bad weather happens there is anyway a lot of work to be done to keep the driveway open and other tasks, so having to clear a tent roof on a frequent basis is quite a burden. I have only had smaller fabric shelters of the portable garage size and I can report that even though I had a much smaller property (1/2 acre) the snow managed to destroy 2 different covers when it got away from me when a big storm came through and I was at work all day for example. Especially if you have not done any other protective measures for items in the tent and are relying on that cover to protect things, you can then get a lot of secondary collateral damage on top of ruining the main cover. Just take it down, dry it well and put it away for next spring when it will still be perfect and give you years of service.

Have you heard of a Foley mill? It is manual and you don’t even have to remove the skins or seeds. That way you get all the nutrients from the whole apple. You can use it with other produce like tomatoes.

I usually don't peel my apples for applesauce, but I DO chunk them up and make sure the seeds don't go in because there's a ridiculously small amount of arsenic in the seeds and I just don't like to include it. When the apples have cooked I use the old-fashioned colander/strainer on a stand with a wooden pestle. It makes very smooth applesauce. Of course, if you like it a little chunkier ... you do have to peel the apples rather than have to pick the skins out after you cook them. My last batch I had some wild blackberries we'd picked along our road and added those ... with some cinnamon, nutmeg and some sugar ... delicious.

You don't have to blend apple sauce. You just cook longer and stir, leave the peels on for pink. I've got 500 apples. You were speaking to me with that nudge that I don't need to remodel the house and clean and fix everything for years before being an artist. I can do it in a minute.

My excuse for not doing what I want to be doing is that there are other, more important things to spend my time on. Then life moves and months or years pass and I didn't do what I really wanted. I try to make time for those things more these days. Life it too short.

I think in life when you look at what is most important you realize family comes first. Being close to family as they start their own was more important than living in Hawaii

@@babs9495 yes and it also was a rental. Their dream has always been to own land and build something for themselves since they quit sailing.

Thanks everyone, I went back and got caught up with everything I missed. I did not know the house was a rental. Everything makes sense now. I hope you guys do grow your own food, from one vegan to another. I think a podcast episode with the Shure sm7b mics would be so cool. Just to hear you guys talk about everything you’ve learned would be incredible for the vegan community and people who want to learn how to grow their own food and travel and do construction and raise a baby on a vegan diet, etc.
