Spring radishes are coming out of the garden and a perfect way to preserve them is to FERMENT them! Sarah harvests some radishes from the garden and then creates fermented dill radishes.

Just a note. I do NOT like radishes. But, last winter I did fermented radishes for my sweet husband and loved them so much I had to make him another batch because I ate most of them myself. Dill makes them perfect.

mcg267 gosh sakes no such thing as a stupid question. This whole channel is about learning 🤗. You can use them as fresh greens in salads. Or you can sauté them in with other veggies with some olive oil and seasonings, soups, pesto’s. The sky is the limit. My favorite way to eat them is in a pot of white beans, greens, and ham. Mmmm so scrumptious! I would search the internet for recipes to try. Most all of them are very simple. And like I said, slam packed with good vitamins and nutrition! Be well, be blessed! 💕

Ha, I just got a bunch of radishes from my daughter- mine are not doing so hot this year...- Way too many to just eat, so I decided to ferment 2 jars, one with dill. Can't wait to try them, I always fermented them plain but since I had fresh dill I was going to experiment. And here you are 😊

I put fresh radish leaves on my sandwiches for a taste similar to radish sprouts. Very crunchy too!

Just tried my fermented veg for the first time, radish, carrot and bok choy that bolted. Surprisingly very nice, still needs another week though, have my first batch of ginger bug ginger beer brewing at the moment also. And just made a very small batch of apple peel/core jelly

Never tried but certainly will now. My favorite to make is dill pickles. SO EASY. Put your pickles (whole or sliced lengthwise) into the jar stick those dill stems (cut to size) in between, add a couple garlic cloves and then brine and hot bathe it. The dill stems are wonderful just be sure once you cut them to look down the tube since sometimes a bug will be inside. They give it a great dill taste. In fact I used mostly stems and then added some frilly dill and seed heads to top of jar. Don't throw the stems to the pigs!

Radishes fermented are Great ... my wife started last year with the suggestion of Doug and Stacey ... my favorite is fermented OKRA , hard boiled fermented eggs are good also ... yum to fermented foods

Since you like tomatoes you may like fermented grape or cherry tomatoes. I like to ferment them with herbs or plain. Both are divine! I make a Bruschetta of sorts...on a sliced baguette round smear a little evoo, top with mozzarella or my favorite Asiago cheese, even fresh parmigiana, add the fermented tomatoes and toast in the oven. I also like to toast the bread and melt the cheese and then add the tomatoes after it’s out of the oven. Really good with thinly sliced ham too. Even my grandkids love it. They call them, “Nannie pizza.” LOL I hope you give them a try and like them. They really are yummy. TFS the radish idea! I’m especially excited about trying them with the dill. YUM!! I have almost finished the 2nd quart of fermented radishes in my fridge. Love how crunchy they are! The ferment takes some of the bite out. Really good! I bought the glass weights and silicone lids after watching one of your videos. Makes it so easy!

You can also roast them, or mash them, or grate them as an alternative to potatoes! The taste and texture is very similar to potatoes.

I know you said you feed your radish tops to the animals, but do you know you can eat them too. They are wonderful. If you cook them like you would spinach mustard turnip or collard greens, they have a peppery spinach mustard cross taste. And if you eat mashed potatoes a lot cook some radishes in with the mashed potatoes. It adds amazing flavor to them. I love watching your show.

Wow! I've just had some success with fermenting, but used 2 tablespoons of salt per quart. I'll try 2 teaspoons and see if it works - that would be much better.

mary jemison It is, isn't it. I use it for filler in my perennial garden, and Black Swallowtail butterflies love it. The experts say they like parsley the best, but I've found they like dill the best(in my yard)

This peaked my interest, I have never fermented, worried I wont like the taste, I know they fermented food are good for you, I think I may do more research, (it looked beautiful) and I love dill

I was worried about it at first too! I tried it first with carrots, which are inexpensive to begin with...so if I didn't like it, big deal! But...I loved it! I encourage you to try it!

Just a point, at 5:30 you are putting on the lid and saying it lets the air out but it actually is letting carbon dioxide out and preventing air to enter the ferment...

Our raddishes went to seed fast this year. Too warm this year. Now in June it has cooled off.

Fermentation is the one thing I have not tried yet. It seems kinda scary to me. I don't want to kill us lol.... Do y'all ever have guest come stay? One of these days I want to come for a visit. Y'all are doing an awesome job of everything.

One could just leave a regular lid loose, instead of suing/buying the burp lids. Ferment will still be covered and self burp.

Just wondering if its safe to use salt that has a lower sodium content...….preserving requires precise amounts of sodium to water levels......I always use canning salt for any preserving....although I use Himalayan Pink for all other use.....

Fermenting is different than pickling. The reference that I use to learn about fermenting is a book called "Fermented Vegetables" and I will add it to our Amazon shop for those who are interested. They recommend using mineral-rich salts of the land or sea for fermenting and discourage using iodized salts, canning salts, or kosher pickling salts.

No, it's not like pickles. Try it with something cheap like carrots. You'll lose $2 if you don't like them.

I have planted dill seed three times this year and have not had one plant come up. It's not my seed. I got those this year from MIgardender and Bakercreek. What could possibly be going wrong?

Are they getting enough water? Seeds need to stay wet (maybe even watered a couple times a day) until they germinate. After a successful year last year...the seeds that dropped in the garden (and the other gardens, and the lawn) germinated on their own.

I checked the soil moisturizer a couple times a day and it seems okay n. The basil, calendula, cilantro and other herbs have came up great. The sage and oregano are others that I'm having trouble with getting a good stand of.

Sage is tricky and can take 3 weeks of perfect conditions to germinate. Oregano can take several weeks also. I surface sow oregano and dill. Then I make sure the very top of the soil never dries out by misting several times a day with a hand sprayer. Oregano and sage I start in the house on a heat pad so I can control the conditions easier. Wish you lived nearby, I would just dig some up for you.

Your nose will tell you if a ferment is bad. If you don't like the smell then probably won't like or might be off.
