Please note we should have moved the canner off the electric heat source at the end of processing, and to clarify: excessive liquid loss in jars due to canning are best to refrigerate.

Do you have any advice for finding trustworthy recipes for canning less typical ingredients? Are there any safe ways to tweak recipes, like using a jelly or jam recipe with an unusual type of fruit that isn't quite what the recipe was tested with (or something like pickling a different kind of thistle hearts but canning with a pickled artichoke heart recipe)?
