I'm busy in the kitchen preserving food for winter - today, we're making oil-packed tomatoes which is how I preserve my tomatoes from the garden! This method is EASY and is way better than heating up a water canner!

The Elliott Homestead you really need to address the very serious issue of botulism - especially with the raw garlic. Probably better to roast the garlic with the tomatoes and can the jars to be safe.

I was really into your channel until I saw this. Now I don't think you know what your are talking about and I no longer trust anything that I learned from your channel. There are several ways in which this is not at all safe. :( (Reposting this here in hopes that you see it because lots of people have brought this up and you still haven't addressed it at all. Shame.)

Just coming back to warn people... this method does not work! I followed this tutorial earlier this summer and just went to get some tomatoes out of my oil pack and they have black mold throughout them, despite being submerged in the oil. What a huge waste, I'm so disappointed

Absolutely trying this one! My husband grew over 400 pounds of beautiful tomatoes, we are even eating tomato chips from the dehydrator! 😊

In the end I was used to it but I was mostly asking to see if it was just my phone! I’d watch this channel if the only way to know what they were saying was subtitles. 🤷🏻‍♀️ Love you Shaye! ❤️❤️

I did this with my cherry tomatoes last year and LOVED enjoying the fresh summer taste all fall and winter long. Instead of one large jar, I did multiple pint jars and it worked out perfect for using in a pasta dish. Thanks for the great tips!

Thank you so much for this! I am balancing recovering from a c section while caring for a newborn and my tomatoes are just coming in by the bucketful and I needed some seriously fast preservation. I had my husband roast these on the grill after he cooked dinner for us and now I'm packing them in jars. This was so fast and easy! THANK YOU SO MUCH!!!

Excellent. I’ve been preserving grape tomatoes like this for many years. And the olive oil that is in the jars is OUTSTANDING.

Oooo! I’m going to do this again this year! I tried a different approach by dehydrating them until chewy & then following the same routine. But, roasting them sounds amazing! 😋They were so perfect to have for pasta night! Thanks for the inspiration once again!☺️

Trisha Brink my understanding is that, even when stored in fridge, must be used within a few days once opened. Is that what you also found?

@@shannalane8349 hmmmm, no. As long as the tomatoes are submerged in the oil and stored in the fridge they should be good for six months to a year. My family of four has been eating this way for years and never had a problem., As I said before I dry my tomatoes in the dehydrator first, and then put in olive oil. You can use a glass weight if you want to avoid any mold. But, they turn out beautifully used in pastas etc. I’ve never had a problem!

I just now found your channel, I’m going to have so much fun exploring everything!! I too live in the middle of Washington state, we have pear orchards and live in the middle of one of them. Several of my grandchildren are homeschooled. We enjoy a wonderful life. Thanks for sharing!

Thanks for the video. I preserved my cherry tomatoes using your method after watching the video. I preserved them right around the time you posted the video. A few days ago, I prepared a nice pasta dinner with mushrooms, bacon and cheese. The tomatoes were so fresh. Thanks for showing me something new. I'll definitely do this again.

Oh these look delicious! I guess as you eat the jar down about half way then you can move them to a smaller jar and cover with olive oil. Yummy! I love 🍅🍅🍅. Thanks.

I have read in many different places, not to put raw garlic in oil unless using it within 2 weeks and that's if it is refrigerated. That botulism spores can grow in the oil and garlic. I have read this on many fermentation and preserving sites as well. I would love to hear your or anyones input on that...because I would have never thought such a thing. I was always making up a tall oil bottle with fresh herbs and raw garlic prior to reading about that!! Love this tomatoe idea, and doing it this,weekend! Thank you!!

Here’s the deal for those who have negative comments you can always just scroll on by. And at the very beginning she stated they need to be refrigerator. So with that being said we should be just fine. If left on the counter yes major issues. So we gotta listen folks

Unfortunately there’s still a risk of botulism even when refrigerated. A few days should be just fine but long term can be very dangerous, even in the fridge.

@@TheHouseAndHomestead i think I would have to read up further to make that call for my family I know that it’s been done for years and years. And even with with foods that can be water bathed there is always a chance something-will go bad.

Shaye!!!! This was a great video and I'm so glad you did this. I heard you speak about roasting.....olive oil.....knife.....air pockets on the broadcast I was listening to the other day and I missed some of the instructions. I mean I can listen again, but was super happy to see this. Your tomato plants look huge- almost a wall full. Ours grow on small plants back here in Maine. This looks like a pretty easy- no more water bath!! Music was great, too. Different vibe to this and I really, really enjoyed it. Thanks for posting. XO

@@shannalane8349 Thank you, I do trust old methods a lot of the time though. Preservation of food has been long suppressed from us who have gone through public schools. They stoke everything full of fear, I even remember a story of a woman dying from a cut on her finger from gardening...I'm still gonna garden. I still need to preserve food, but I will look deeper, thanks. God bless!

I saw this last year and followed this method. Had tomatoes all year from back of frig. Awesome. Did not die from botulism. Have reloaded frig this year with same. Can do this with pickled eggplant. (Chef John's escabeche is the best). Capped with olive oil, it will last all year in frig.

Love watching your videos! I like direct camera for on the speaker, and then side camera just for close up of the food. Side camera on the speaker messes up the in-person feel.

@@michelleprull4105 Really long ago but, I used these on eggs in the morning, over past, on salads, with cucumbers in salad with blue cheese. It's seriously addicting and I will be making a couple gallons at least this year.

How is it that I’m 66 and have been canning tomatoes all my life (thanks mom) and have never even considered this way of preserving? How can I pass on my vast knowledge on to my kids without this preserving method (too late anyway, lol). I can share you with them and take credit for that. I have Jacobsen’s rosemary and basil salt and those are going to be going into my next tomato frenzy. ❤️❤️

My mother in law buys big jars of tomato paste, then pours olive oil on top and puts back in the fridge. It keeps mold from growing. If you don't cover it back up with olive oil after taking some, mold grows. I've seen it

Mmmmm! I'm totally doing this with some of my crop this year. Sun Gold are my all-time favorite cherry tomatoes, and I grow a lot of them...and Roma. I no longer bother with any other varieties.

For all of those freaking out about botulism it grows favorably at 86F when refrigerated this is perfectly safe particularly if you keep your fridge really cool. Give it a google before you leave angry comments. “Nonproteolytic types grow between 38 and 113 degrees F, with an optimum for growth and toxin production at about 86 degrees F. For these types, refrigeration above 38 degrees F may not be a complete safeguard against botulism.”

Did you read that? My fridge is set to 38 degrees. Most peoples are and that doesn't account for people who's fridges are set lower but struggle to stay at that temperature. Which is why the CDC does not recommend this for the average person who does not have a reliable commercial grade storage fridge. Because a little bit of warming here and there over the coarse of the year can add up. Keeping stuff cold doesn't kill bacteria, it just slows it down.

@@Nellywellum maybe you set your frig at 36-37°. Mine is always set at 37° and my food lasts much longer. (and my freezer at -1°). And, if I'm opening and closing a lot I set it down for 1-2 hrs or to keep the temp of everything from going down. Adjusting the frig temp is very easy. That and wiping the top of the jar, topping off the oil and using v.clean utensils every time you take from the jar should work. Using clean utensils in all jars is always critical for maintaining proper food storage. My 2cents. I'm going try a small jar. READ THIS: www.feastingathome.com/olive-oil-preserved-vegetables/

This is a real inspiration! I have 4 children 6 and under. Last summer I spent hours upon hours milling and water bath canning tomatoes. This is so much more practical. Do you have any information on how you use dehydrated tomatoes in your cooking?

Love this! I've done something similar with plum tomatoes but seed and skin first. Then cook and then bake them down to paste consistency.....pack in a jar (when cooled) and top with olive oil. Been a few years but, absolutely , nothing better in Winter than summer tomatoes!! You're making me want to plant cherry tomatoes next year.

I smoke mine then pack in grapeseed oil. Grapeseed oil can be used at high heat which opens up uses.

I think the biggest concern is to refrigerate after opening and use it up within a few days. There is some info on the CDC website.

@KM lucky you it means you have had a ton of luck until now because garlic and onions are the most ‘dangerous’ veggies when botulism is concerned. Botulism is aenorob which means ‘any liquid’ helps it to grow if that said liquid is not under ph 4.5

@@shannalane8349 I have never agreed with Shaye's method of canning jam (turning her cans upside down instead of properly water canning them), but didn't think packing tomatoes in oil (even refridgerated?) would be along the same lines. Thanks for letting me know!

Brilliant recipe. Did the sound quality feel a bit underwater? I love tomatoes in the winter. I grew 70lbs of romas this year. We have canned, dried, frozen and eaten all from this year. Next year we will pack some in oil. Brilliant. Oh, say, have you heard how to water glass eggs? It stores them for winter too. Brightest Blessings!

Shanna Lane Thank you for your comments and I have now looked into this further and I thank you for your warning (tomatoes are now going in the bin), although I was taken aback by the bluntness/rather straightforward nature of your comment, I assume you were only doing so to avoid botulism. I watched the video in good faith, assuming, as it turns out incorrectly that this was a safe approach. Thank you again for the warning.

I just bought Presselli salvagusto (in English it is written: Save-Flavors) In a box there where 12 disk with 4 legs each . it is to make sure your food stays under the oil or vinager in your jar. Smart gyzmo

I wish I had seen this a few months ago when my CSA had so many tomatoes and I didn't know what to do with all of them! I did make some things, but I haven't tried canning yet, so this would have been huge! At least now I know for my own garden next year! I wasn't sure if I would grow tomatoes or not, now I'm sure I will!! Thank you!!

Oh my goodness! Thank you so much for this GENIUS recipe. I grew a few tomato plants in my tiny backyard and don't know what to do with all the fruit ripening at once. Not enough to justify all the work involved in canning a jar or 2 but THIS! You've solved all of my problems. Well...maybe not ALL of them...;) (Gratefully yours, a typically silent follower).

once you see mold, the spirules are at least 10 inches long so it is throughout the food. you cannot "scoop" mold off

Looks amazing and id love to try it with my masses of cherry tomatoes but I thought undehydrated fruits, herbs and garlic in oil was unsafe For long term storage? That it had to be used within a few weeks even in the fridge?

I did this method last summer. As long as you keep everything covered in oil you are ok. If you get lazy and don’t cover it... within a week anything out of the oil will mold. I used up my last jar this last may. I roast garlic and keep it in olive oil too.

It's not mould I'm concerned about. It's recommended that anything with water content, garlic especially, isn't kept in oil, due to creating the perfect environment for botulism spores to breed (water and no oxygen). Even in the UK where we don't do as much food preserving we're told not to store undehydrated foods in oil for more than a few days in the fridge.

@@nenemaria-cornfieldsgarden I was also taught the same, use it within a few weeks. The only way I know this method of oil packing is safe for longer is with homemade tomato *paste*...which is very very salty and very concentrated.

Nenemaria i know olive oil does have some antibacterial properties, as well as some of the herbs, maybe that keeps it in check? Just wondering if that’s part of the reason it works?

Suggestion: a glass fermentation weight, to keep the tomatoes submerged.
