Honestly, this is the only channel on RU-vid that I put on full screen and watch from beginning to end without scrolling through the comments or looking at other videos. It's just so relaxing.

I agree with you my small garden has really helped us. But also this is the first year we’ve actually traded produce with neighbors! So that’s been a silver lining for us in this inflation period. Neighbors looking out for neighbors.

Thank you so much for making these videos. I live in Alberta (zone 3b) and our growing season is so short and our winters are so harsh. Learning more about preserving food has made me a more confident gardener as I feel more prepared to grow more and not have it go to waste. Thank you so much ❤ 🇨🇦

I'm also in Alberta but zone 4b. It's been so harsh this year growing, I love watching these videos because it gives me more motivation to keep trying tho it's hard here. Been brutal this year with smoky skies and incredible heat. Most of my veggies didn't make it, hopeful on our potatoes tho.

Loved the video and always get so inspired by all your preservation projects. Riggs is really growing a lot too! Each one of your children knows their way around a kitchen and their skills are mind boggling. The canning book you referenced is full of delicious recipes. The large roaster pan is great for all kinds of things! Cooking multiple whole chickens at once, huge pot of chili, roasting a ton of butter but squashes. The list goes on!!

I totally agree with you on the garden thing. I don't know how people don't have a garden! Organic food is very expensive. You're right, getting started can be pricy, but once you're established, the cost is much smaller!

You are so right! It is so worth it to grow your own. Im not as self sufficient as you guys are but i have a large garden and fruit trees and bushes. It really does save money and is satisfying.

I have had a large vegetable garden just for me husband and me to cut down on food costs the past five years, and I agree with you that it is indeed a game changer. Fresh veg in the summer and frozen in the winter is wonderful tasting and so healthy. We are in our late 50s, and the only people of our acquaintance who aren’t on medication/have health issues. The exercise of gardening and the hour walk in the morning before the day starts I have little doubt helps too. What you are doing is awesome, and thanks for the great video.

Just love watching your garden grow and then harvesting time. I only have 4 garden beds because of our small yard so mainly grow tomatoes, cucumbers and peas and carrots

If you want a thick tomatoe sauce fast, can the watery juice from the tomatoes separately from them as tomatoe juice. Last year I canned 31 dozen pints of juice as tomatoe juice, some with hot spice and some plain. Just scoop out the water from the top of the pot of cooked tomatoes after 30 minutes and can that as juice separately. To every pint I add a tablespoon of 6% bottled lemon juice and a tablespoon of lime juice for flavor. To some I add hot sauce and to others salt and pepper. Variety is the spice of life. Tip I saw on another video, use your kitchen aid mixer to shred chicken using cake paddle to do it. Loved seeing you all again doing what you all do best.

When it comes to inflation I see the same thing. We also only go grocery shopping once every few months or we do a haul from Azure. We mostly buy convenience foods like ice cream. I am also constantly surprised about how much the prices has gone up. Like you, I don’t know how people can afford food without having a garden and chickens. Eggs has gotten so expensive. Today I am canning chicken pot pie base, and roasting a Turkey to can later. By the way, thanks for recommending freeze fresh. I did the Italian inspired tomato sauce, and my kids love it. I can attest to the prices at the grocery store. I also have a garden and when I walk by the produce department it shocks me. Also, I purchase bulk through Azure and that is an amazing savings. Your harvest is just amazing.

Also, one thing that I think is that the money you spend in building the garden will not be the money you will spend every year, bc the garden is already set, in the long term it's just benefits really

I still go to the grocery store frequently but the other day I felt like I was walking through a scene in Wall-E. 95% of the store is a value-added product designed to separate people from their money. Even my regional co-op has largely become a value-added shopping experience. We're relatively comfortable but I still do not know who can afford to shop like that right now. I keep a couple family-sized mac and cheese and lasagnas from Costco in the freezer for the nights we *just can't*...which is cheaper than DoorDash, but that's it. Everything else is from scratch and it still feels expensive. This is the first winter garden I have grown that may make a sizable impact on the budget and I'm spending every day hitting the farm stands and getting food in the freezer, freeze-dried, canned, etc. It ruins every single August but it really feels like the only realistic way forward! Love that roasting pan idea....

You should grow white half runner beans and try them out. There a mix betwen a pole bean and a bush bean so they do need trlising. But they taste nothing like a normal canned bean or fresh green bean from the grocrery store. You can just eat them with a some cornbread for your whole meal; there delicious. I'm from applichia and there what my grandparents raised us on and there all I grow now. I fix a pot of them with some bacon in them and if I'm canning them I do the same thing put a piece of bacon in each quart with my salt and pressure cook 15min on 10lb and I let it slow release the pressure . Also they don't all come on at same time I got three or four pickens from them this year that way you don't have to can them all at once. This year I dryed some of them out; I just put them on strings and hung them outside away from the rain till they dired. Made some leather britches with them, they are even better they actualy taste like meat. You just have to let them set in some water overnight before cooking to rehadtrate. But when you let the beans dry like that you can keep them over a year just in brown paper bags.

Riggs is getting SO big, he's a handsome boy. Next time you need shredded chicken toss it in your Kitchen Aid mixer...put it on low for a few minutes. It comes out perfect.

Thank you to you & your family for your videos. You & a few other youtubers have encouraged me the last few years to be intentional with my garden (I dream of having a garden half the size of yours), canning & cooking. Girl, pressure those tomatoes first for 5 mins at 10lbs pressure, it separates the water from the tomatoes and you don't have to cook it down as much. Just pour the water off, mill it or emersion blend, add spices, and it's almost ready to can. Very low cook time to thicken. Sometimes I don't even cook it down it's already so thick. I've showed this a lot of times on my channel, but I'm so small (4k) no bigger channels watch me....yet. it's ok, they will one day 🤣

I bought one of the 18 qt roasters last year for food harvest and it was a GAME CHANGER! I love mine! I can cook 3 whole chickens at once and then use the roaster to make chicken broth after! It's amazing! I use it for pizza sauce, spaghetti sauce, canned whole chicken, chicken broth, beef broth. SO many possibilities! You are going to love it!

Yep - we moved recently (from 1/2 acre to 14 acres) so I’ve only just got the garden set up, and am having to buy most of our produce. I’m spending $400+ each week, all certified organic (including meat), and it’s blowing my mind. It’s an investment for sure, and I would always put my family’s health first, but having a garden to supplement just makes sense. Even for those who only have an apartment, there are great options out there these days.

The Sun-dried Tomato soup from that pressure canning book is phenomenal! It uses up some zucchini too. I do leave mine a little chunky, but you can blend it smooth too.

I commented earlier this year about me having overwhelm from a bumper crop of outdoor paste tomatoes last year and how I might plant closer together this year. I got zero tomatoes due to onset of overnight blight. Serves me right for not being humbled when blessed. 😳😔 This year I’m inundated with French bush and haricot beans. We don’t like canned green beans so some are in the limited freezer space and the rest are podding to harvest the white beans Demi-sec to make canned tomato beans (from last year’s canned tomatoes). What we call baked beans. The remaining left to dry. In response to your reference on how we manage with food inflation… without a garden…. We grow for fresh in season eating with some crops for bulk storage like garlic, onions, potatoes, peppers, tomatoes, squash, berries and fruits. The cost of electricity for freezing and gas for processing/canning has also skyrocketed so for some out of season vegetables like peas and corn, it’s just as cost effective albeit not affordable, to buy frozen from the store when needed. Another example is buying dried chickpeas to process hummus. The cost of store bought canned chickpeas is much cheaper to buy than canning bulk bought dried chickpeas. Same cost as a canning lid. Lastly, supplementary canning ingredients for long term storage. Vinegar and lemon juice used to have acidity % on the label. It disappeared around 18 months ago in the UK. Not even 4% let alone 5%. I stocked up on bulk vinegar from a repeat Amazon order advertised as 5% and suitable for canning/pickling. It arrived last week and has NO acidity level on the label. Not sure if it’s an old EU regulation finally filtering through to the UK or our regulators are deliberately withholding the information after Brexit. Scaring us into stopping from preserving our own food. It’s illegal here for people to “routinely” give away home grown and homemade produce unless registered and regulated. I grow food/herbs for convenience and healthy eating. Cooking from scratch. But inflation hits us in other ways: Above and eg, price and safety of compost, poor quality and more expensive seeds. Limited to zero access to safe canning ingredients. And the government appears to be making our lives exponentially more difficult. Cos reasons. Lastly. The government can requisition all homegrown and farmer produced crops at any time if national food security is jeopardised. Probably the same in the US too. I’m treading water waiting for the inevitable. Love your video, btw. Especially the music 🎶💚

I totally agree about the cost of food from the grocery store! It’s awful! I try and shop once a month in the summer as I can harvest from my garden instead. I figure if I can’t make it or grow it , I will go without! Love your channel and your whole family!

I love your cost analyses of groceries. It is crazy to see prices and I wonder how people are managing. I try so hard to grow in my garden, but this year was HORRIBLE. I had no tomatoes survive, squash was decimated. But we try and try again.

I love your try again attitude 🙌 I’m sorry about your garden, but with continued effort I’m sure you’ll succeed! We’ve had some rough years too. But each year we get better at growing, if we get a terrible harvest of something usually we’ll get a enough excess from another vegetable to make up the difference.
