For this batch the broth was cold. What we typically do is allow the jars to warm up slowly in the canner before we put the lid on the canner. This allows the jars to heat up. If you place a cold jar in a hot canner and seal it immediately, you can have jars crack or shatter due to the temperature swing. It's better practice if you're nee to canning to start with cold water if the contents of the jar is cold. Once you start to build confidence, you can find a few time hacks to increase efficiency.
