About This Video:
I gathered polynesian arrowroot, grated it, extracted and dried the starch and cooked it into gelatinous, pancake shaped food that tasted like rice noodles. Polynesian arrow root is a plant in the same family as yams but with a different growth habit. It has a single, branching leaf and a single tuber below ground. They were brought to Australia about 5000 years ago as one of the "canoe" plants carried by Polynesian seafarers and grow wild in the hills near my hut to this day. The tubers are rich in starch but have a bitter compound that needs to be leached out with water to be made edible. This same compound is traditionally a medicine in small quantities for treating a range of illnesses from gastrointestinal upset to snake bite. I dug up the tubers which took about 3 minutes to do per plant, yielding one golf ball sized tuber each. These were then washed and grated into a pot using a roof tile. The resulting mash was mixed with water and allowed to settle. The white milky water was then scooped into a second pot and the starch was allowed to settle. The water was then poured off and more starch water was tipped in. At this stage the starch was still bitter, so it was mixed with water, allowed to settle and the clear water above was poured off several times removing this bitterness. When it tasted good, the paste was put onto a tile to dry over a fire. Some of it cooked and became small rubbery pieces of starch. The dry flour was stored in a pot. Some of this was then mixed into a paste and cooked on a tile like a pancake. It turned clear when cooked and has a rubbery texture. It tasted just like a rice noodle which is unsurprising considering the ingredients are nearly the same. Starch is the largest carbohydrate in the human diet. Polynesian arrowroot starch contains 346 calories per 100 g (wheat contains 329) and so the discovery of this staple food is fairly significant. It can be stored indefinitely if kept dry and away from weevils or can be stored as live tubers for six months (then they begin to sprout and should be planted). The live tubers bitterness means animals will not eat them which is good for storage. I may cultivate some in a small plot in the hills near where I dug them up. They are numerous in the wild but may produce more if the soil is tilled.

I saw Ray Mears do pretty much the same thing but with roasted, ground acorns. He left them in a mosquito net in a stream to wash out the tannin.

I feel like if he found a way to culture yeast (which in theory isn't hard because it's literally everywhere), and he felt like it, he might be able to make a sime bread with water, arrowroot flour, and the wild cultured yeast. Would it be good? Idk, if the simple arrowroot pancake he made was at least slightly palatable, it might work.

Flatbreads are easy: starch, water, stone to heat it over, fire to put under or near the stone. Yeasted breads: read any website that has a sourdough starter. I'm not sure if you can generate a sourdough with a tuber starch or if it only works with grain starch. I would expect the tuber starch to work, but as Louis-Charles Clark said it wouldn't rise properly without gluten. (This is why gluten-free yeasted bread is so hard to make.) 'Baking soda' bread: Get 1 edible acid. Get 1 edible base (alkali). Make sure the product of reacting the acid and the base is also edible and doesn't taste awful. Use them to make a 'vinegar and baking soda' volcano. Because that's fun. Then do a lot of experiments mixing your starch, water, acid and base and cook them. Once your bread is fluffy enough, or as fluffy as you can make it, you're done. Both the yeasted and the "baking soda" breads can be put in coals to cook for breakfast. If you're sticking to primitive-technology rules, just make a big lump and stick it in the coals. You peel off the burned outer casing and eat the inside. If you're not using primitive technology rules, use baking soda as your 'edible base', and yoghurt, sour cream, citrus fruit, vinegar, and anything else 'tangy' as your acid. (foraging for berries or fruit works under prim-tech rules.) You can probably use the 'pepper' or 'chili' family to be your acid, if you're brave. If you're not using prim-tech rules, wrap your bread in tinfoil or alfoil before sticking it in the coals.

That’s very similar to the cold water processing of Oak Tree acorns here in the US, long tedious process, but can come out quite good for flour. It won’t make that gelatinous mass once cooked however, more like a saltine cracker, or it can be used as regular flour to make tortillas and bread. Thanks John

Still eaten in some remote parts of the Pacific. More of a Melanesian staple than a Polynesian one though and instead of arrowroot they extract starch from the Sago palm tree. Still very heartwarming to see something many Pacific Islanders eat brought to light on this platform! This method can be done with any starchy food including commonly found Potatoes and Unripe Green Bananas! Although don't do the taste test with Cassava (a relative of the Arrowroot which is why I kind of irked when I saw him taste it). Raw Cassava has enough cyanide to kill a full grown person in seconds lol. Fun fact this is also the same method that starch for tapioca pearls are used for those trendy bubble/boba teas that are popular in Asia.

I had no idea how time-consuming it was to get starch. I never knew it was bitter until you rinse it, either. I've been binge-watching your videos for a couple days, now, and by far your channel is THE most useful when it comes to truly living off-grid or bushcrafting. It's interesting to see so many people stock up and prepare for disasters, yet dismiss the notion that one day soon we might indeed be reset globally to this kind of lifestyle. I grew up doing everything by scratch so that aspect isn't new to me, but things like making starch from roots or fibers for making clothing are definitely more challenging. SO many people are going to be unprepared when the reset happens. I'm glad to see so many people are watching and learning from your videos. Thank you for sharing your knowledge of the land with us all. Even if we are not in your climate area, we can still benefit from the skills you teach.

ya know, id love to see a collective channel going, all in the same style as yours, with people from around the world showing survival in different environments. i love your content and it makes me wonder how things would go in my area, the sand hills of the midwestern USA, where there is much less tree coverage and the soil has a much lower clay content. the area is basically a sand dune desert covered in wild grass

It may interest you to know the research shows that hunter-gatherers work less on average. One researcher, Ross Sackett, found that hunter-gatherers work an average of 6.5 hours per day. People in agricultural and industrial societies work an average of 8.8 hours per day.

Great! We raise a lot of canna lily (AKA Queensland arrowroot) which is native, or at least pre-Columbian. Gluten free noodles are the main aim, but any flour can be mixed (3 parts flour, one part starch), dough cut and dropped in boiling water. For pure starch noodles, water and starch, drop in boiling water, and grin at little kids giggling over invisible noodles. This is an American Indian recipe.

I know you probably don't do requests, but could I ask more about primitive chemistry? My favourite videos are the ones where you use materials as glazes, or treatments, or otherwise ingredients for reasons that now make sense to us but at the time were just trial and error. It's so satisfying, watching you find the best natural source of the iron you need, or the clay you'll need, etc. Cheers!
