Processing dried dent corn and making homemade and homegrown grits!

As an addition to my vegetable gardening, I also like to show the processing and cooking of it! After pulling dried dent (field) corn 2 weeks ago, I am now ready to start processing and cooking the corn. I have wanted to be able to grind dried corn into corn flower and grits and in this video I try it for the first time. I am using a food processor since I don't have a corn grinder and will then pass the ground corn through a fine sieve for flour and then a larger sieve for grits. I will then cook the grits to see how they taste. This video is the 19th of the three sisters series that I have done this spring and summer and I will likely do one more where I make corn bread. This garden is in northwest Louisiana, zone 8b. It is an organic garden and I utilize principles from Back to Eden gardening, Ruth Stout gardening, and regenerative agriculture. The corn that I grew is hickory king corn which is a dent or field corn. I also did a video in July where I made southern-style cream of corn with freshly-picked, ripe field corn. Grits is made from ground hominy which is made from nixtamalized corn. Not only is what you made much harder to grind, it is also bereft of valuable nutrients.

Howdies HLH! Your vid popped up and you did a great job with it. Every place here has Jim Dandy grits, my pref, but actually locating who makes them is a chore. I found the company that owns the brand but they had zero info. I had to turn to Wiki to finally get my question answered. Observe: Grits are a porridge made from boiled cornmeal. Hominy grits are a type of grits made from hominy - corn. So what you chewed was, according to questionable Wiki, porridge. NOW I also know what porridge is, if what they printed were true. Always wondered about that. Besides writing to say thanks for the experiment. thought I'd mention that for the first time in 40+ years of gardening I planted a patch of dent (In the souf where I live it's called 'field corn') in my neighbor's yard waaay too close to my sweet corn. Ha! . This for experiments in grinding for all the stuff you did plus masa as part of my prepper prep. Got the stuff to hominy it, and I think I'll try wood ashes as well just for giggles. It was good to see how you did it. Ya done great!!

Thanks so much. I have also gotten the salts for nixtamalization but haven’t tried it yet. If I can ever find the time, I plan to nixtamalize the corn and then grind it once it has dried with a new grinder that I have acquired. I am from Louisiana and have always called it field corn as well - just the seed catalogues that I use refer to it as dent corn and I’ve gotten in the habit of calling it the same thing. @@alanbrown9179 Ha. (Field corn)... GREAT to hear from you. Well, I haven't gone that route yet. I'm up for waiting if and until I strike field corn gold in July and let it sit awhile. We made our first corn tortilles the other night. Not my favorite, but went aces with some home made bbq butt beast. From what I read you nix that stuff, rub it around some to remove the hulls as good as you can (after rinsing real well) and then grind damp. So the vids say. Got a hand crank grinder we haven't used either. So we're both experimenters. Mebbe we'll discover rocket fuel. Might. GREAT to hear from you my friend and again..super work on your video! It tasted great. I have since learned about nixtamalization, which is the process of soaking corn in a basic solution which turns into hominy and releases B vitamins from the corn. I haven’t tried it yet, but have the salt to make the solution. I hope to do another video beginning with the nixtamalization process.

Hi , that process is not as safe as they would have you to believe because their is a chemical in the wood ash lye ( lime ) solutions that contain potash a poisonous substance that acts on the body over time. God is all to wise and would have us soak the corn overnight and boil it the next day . Many fishermen use dent corns to catch fish just by boiling the corn . I hope you can do a video on that as well thank you for sharing.

The first time i heard of grits was when i was a kid watching my cousin vinny, always wanted to try it. It's not something you can buy in Australia so i may give it a go one day, but I'm planning on making masa. I have a carona corn mill, i might try some of this with some of my leftovers. Thanks

Grits may well be my favorite comfort food, but I grew up eating them. It’s funny you mentioned My Cousin Vinny, because I was thinking about the lines from that movie when I was making the grits yesterday 😂! I want to get a corn grinder. Are you happy with the one that you have?

@@alanbrown9179 i have only used it for crushing sorghum so far, but it did a pretty good job, i have seen people use them for masa, i just haven't gotten around to it yet, but i have some red i grew last year i will process it soon and put up a video

Thank you! Since I made the video, I have learned that a process called nixtamalization is done to the corn prior to grinding it. I intend to one day do a video on that process as well.
