Recipe
Makes 1 9-inch tart
Serves 8 to 10
Ingredients
Pastry
½ cup + 2 Tbsp (145 g) unsalted butter, room temperature
½ cup + 2 Tbsp (81 g) icing sugar, sifted
1 hard boiled large eggs yolk
1 large egg yolk
½ tsp (2.5 ml) vanilla extract
1 ¾ cups (225 g) cake & pastry flour, sifted
¼ tsp (2 g) salt
Lemon Curd Filling
3 whole eggs
3 egg yolks
¾ cup (150 g) sugar
1 Tbsp (6 g) lemon zest
2/3 cup (160 ml) fresh lemon juice
2/3 cup (140 g) unsalted butter, cut into pieces
½ cup (125 ml) full fat sour cream
Recipe
1. Beat the butter and icing sugar together until smooth.
2. Push the hard boiled egg yolk through a sieve and stir the raw egg yolk and vanilla into it. Add this to the butter mixture and stir until blended.
3. Add the flour and salt to the butter mixture and stir until blended. Shape the dough into a disc (it will be very soft), wrap in plastic and chill until firm, about 2 hours.
4. On a lightly floured work surface, gently knead the dough just a little soften, then roll it out to a circle about 12 inches across and ¼-inch thick. Carefully lift this and line a 9-inch removable-bottom fluted tart pan, press it into the bottom and sides and trim away any excess dough. Chill the tart shell for 30 minutes.
5. Preheat the oven to 325 F (162 C). Place the chilled tart shell onto a baking tray and dock the bottom of the pastry with a fork. Bake the tart shell for about 20 minutes, until the edges just begin to brown. Cool the tart shell to room temperature.
6. For the filling, whisk the eggs, egg yolks, sugar, lemon zest and lemon juice together in a metal bowl and place this over a pot of gently simmering water. After a minute, add the butter and continue to whisk until the curd has thickened, about 5 minutes. Remove the curd from the heat, strain and whisk in the sour cream. Pour the warm curd into the cooled tart shell and chill, uncovered, until set, about 2 hours.

If you don't have access to sour cream Plain Greek Yoghurt is the best option for a substitute. But, if that’s not available, then soft cream cheese blended in with a blender or immersion blender would work just fine. Happy baking!

I followed a recipe where it said to bake again with the custard filling. But you simply refrigerated yours. Can you please tell me the difference??

My husband would have loved this. He loved anything lemon as I do. This would have been right up his alley! I might make this for Easter. My son in law loves lemon meringue pie. This is kind of close. Yum!

I don't care what anyone says. There is no such thing as too much lemon zest. I overdose on the lemon zest anytime I make anything with lemons.

Agree. When I make lemon curd I use all of the zest from my lemons and I never put it through a sieve. The recipe I use doesn't even call for using one. Not one of my lemon curds has had any over cooked egg bits in them either. 👍

I so dislike the fridgerators that have all those glass compartments at many times are so hard to clean cuz it's hard to pull them out individually. But this is a beautiful dessert and I enjoy it

This is my first time making a tart. Is it normal that my lemon curd is really sour? Also my cookie dough breaks a lot and when I baked it the middle part ballooned. I saw somewhere that I should add weight.

As if you read my mind! Been making your lemon meringue cheesecake and lemon pound cake which I tweaked adding blueberries ( inspired by your lemon blueberry cake recipe). My friends have been enjoying it and I have been enjoying feeding them, such a gratifying feeling. I will try this recipe next.

Twice I've tried to get my lemon curd to thicken and failed. I've followed exactly the ingredients and steps and i get runny soup, barely congealed after hours in the fridge. The only difference was using a thick glass bowl and a low simmering, sometimes boiling temp. Anna, please help. I'm honestly greatly disheartened as my mum said you were the best and my number one aim is to have a set in the fridge tarte au citron recipe, nailed.

frozen Sable crusts should be sold frozen in the stores. Better to make from scratch, but would like the option of making it, or buying it.

My son loves Lemon Tarts - I really want to try and surprise him. I am just worried that the crust will not come out as good since I do not own a mixer. Do you think I can have similar results if I prep the mixture by hand??

Your recipes are good but more entertaining to watch than to help people to bake. All of your recipes are complex and involve ingredients I probably won't have. Would be a lot better if we could actually do your recipes rather than comment that they look good. Just my opinion

Made this in tart shells instead. Crust is devine but I found the sour cream flavour was a bit too strong. Might try Greek vanilla yoghurt next time ??

You're a little vague on your instructions for example you go from mixing the butter and sugar then you start sifting something on-top after the hard boiled egg but you don't explain what it is your adding next or how much to add. so i get lost in the recipe and have to go back 10 times to try see what it is.

I made this Yesterday (followed every step) It chilled in the refrigerator 3 hours before serving. It tasted great but unfortunately 10 minutes after I took it out of the fridge the filling started to soften and the slices did not hold their shape ...

If the dough cracks, do we have to place it back in the fridge again before rolling again?

I don't believe so. The point of rolling it back to a disk is to soften it a bit more and make it more pliable. Refrigerating makes it firmer instead, which would be counterproductive, in this case of cracking.

I would LOVE it if you could alter some of your yummy desserts with a KETO option...using no flour and no sugar (Stevia and Almond Flour?)...maybe this Lemon Tart would be a good one to do as the crust may be easily subbed in...and Stevia for the sugar? Not sure how that would change the 'science' of this tart working out!

Hello Anna! I baked lemon tart two times. The base is always delicious but the curd filling never solidifies well enough. Do you know what is the problem? I use a metal bowl and quite thick sour cream. I also heat it in a bowl for 5-6 minutes as you suggest. I don't know what's the problem.

Thank you the recipe Anna, but I have a question. My dough just keeps cracking when I try to roll it out. I kneaded it, sprinkled some water and refrigerated it but nothing seems to help. What can you suggest?

I press the trimmed dough into the pan. I’m sure I’m not the only one who does that.

I made this ... the Sablé crust so yummy on its own (I baked the leftover scraps) .. and the ultimate lemon tart ....oh so Yum! This is a new family favorite. Thanks Ana! 💗
