chef is amazing. He's doing everything from prep, cooking to even washing the dishes. I hope I can travel to Japan and visit his restaurant. tbh, I'm a little concerned though that he's doing a lot and maybe he just love what he's doing, but I just hope somebody else would do the dishes instead. Just so his hands won't weaken from the heat of the wok, and then from the coldness of the water.
All the tiktok videos with the young 20-somethings always complaining about how much work they have to do…..they ALL need to watch this gentleman doing his job. Not a free minute. If he isn’t cooking, he’s either preparing (chopping) or washing dishes by hand. Young people need to learn a work ethic and quit whining about hard work. I praise this gentleman and his staff.
I am speechless! This man is amazing! The amount of work he accomplishes himself, with such a precision - amazing! I wish I could travel and eat at his restaurant. I would only travel to eat there for a week! A super-human! ✨ May you stay healthy and strong!

back in the days when i travelled to japan every now and then because of my job i prefered to go to these small family owned restaurants rather than to go to a big restaurant. the hospitality is unrivaled. and this is definitely one i would like to visit. everything looks sooooo good.

If this CHEF is not the owner, than he should be teaching chefs around the world how great it is to be a chef. I can see the joy in all his moments from the early dawn until close. My total and complete respect.
The chopping technique he is using at 5:42 is mesmerizing. I’m not sure it’s the most “objectively” efficient method, but it is extremely satisfying and clearly he is very well practiced at it - and that’s enough justification for me.
