I'm not sure what you mean exactly by "ski like this", but consider what the level 2 is certifying you on: the intermediate zone. In other words, anywhere from students working on getting out of wedges to parallel up through beginning navigating through easy bumps. Generally speaking, you're talking about a skill set that emphasizes slower, more skidded, speed control focused turns. While everyone in this video are amazing skiers who can also demonstrate those skills, they're showing exciting high performance skiing in this video, not that. If you show up to an assessment and "ski like this", it'll work great if you're asked to do higher performance edging/pressure focused turns. However, if you're asked to do slower, skidded, more rotary focused turns (like you'd want to demonstrate to a student in the intermediate zone) at an assessment but you rely on speed and those edging/pressure skills, that's where you're going to have issues.
