Cantonese may be a language, but it is also used to describe things associated with "Canton", such as cuisine and people. Shanghainese is also a language, and is used to describe natives of Shanghai and the food they are known for. Difference is that while people from Shanghai describe themselves as Shanghainese, I've rarely heard people from "Canton" describe themselves as Cantonese. There are no strict rules when it comes to words foreigners have invented to describe the unfamiliar.
