Hello Rachel and Ron. I'm from Stockton California I'm 16 years old and my name is Jorge. My brothers and I live with my grandpa who is a math and science teacher. Our mother was a good cook like you and made meals from scratch before she died. Watching your cooking videos we really make our own flour and corn tortillas and the flour tortillas are amazing. We make them thicker. Most of the time grandpa let's our friends eat over so we have to Increase the ingredients using math to determine how much more we need to add to your recipes. Grandpa makes everything we do a learning lesson where we have to use math for portion, Good English for description and even discussions on the history of food we are preparing. It really helps us learn to use our brain to know-how much more we need to add to feed extra people. I want you to know my 3 brothers and 8 kids we go to school with on our street all got A's on math and most our subjects. Our friends mother makes videos for a living and she has filmed us cooking your puffy tacos for 13 kids and 3 adults using basic algebra to calculate how much extra to add to your recipes. She is going to share this with the news channel here so they can see how the kids on our street do homework. We made sure to let them know all about both you Rachel and Ron and how you make videos from your home to teach people how to cook. We owe good eating and good grades in school to your videos because you give approximate portions that can be adjusted mathematically to feed extra kids. Rachel, we would like to send you 3 of the videos we had made cooking tortillas, puffy tacos and our Thanksgiving turkey dinner. For Thanksgiving we had to increase portions for 18 extra people plus enough for everyone to take food home. It was amazing. Mr brother said we can email the videos on Wednesday.

Hi Rachel, I watched this video and your Cabbage Roll video, my first thought was "she needs to have her own show on the Food Network.!!" You are so great at explaining the recipes and so organized, I like your kitchen very much!! And I like how you speak so clearly and at a perfect pace, you are incredible Rahel. My son and I cook together every night,and on the weekends we make new recipes we have never done before. Since it's still cold we have been making big batches of homemade soups, we eat some and have enough to freeze for another day. We bought a small freezer this year , we needed the room since we double all the recipes so we can freeze a batch everytime. He surprised me one night and made from scratch soft taco shells. They were so easy to make and so very delicious, I don't ever want to eat a soft shell from a bag again. I will buy him the press machine as soon as I look at all of them, and find a good brand to purchase. I hit like on both videos and of course subscribed!! I will be watching your videos every night. My husband and I love watching your channel and cooking your recipes. The biggest change in my cooking has been to use 2 spatulas (1 in each hand) when I cook. It’s so much easier and neater! Now, no matter what I cook, both hands work.❤❤

Oh Rachel,you are an amazing teacher. I ran across your video by chance and immediately you tugged at my heart strings because your voice is so pleasant,nice to the ear and you remind me of two of my favorite Aunties…and that’s BEFORE you even started cooking. You explained each cooking step so clearly,you’re easy to follow. I have loved to cook since I was a child,my grandma passed several of her New Mexico recipes down to me. One of my favorite hobbies was to prepare Mexican food for my family and friends now due to severe arthritis I just cannot do it like I used to daily 😔 But a couple times a week I muster up my strength and with Gods help,go into my special culinary world where I am happiest. My family used to buy puffy tacos from a little stand in Southern California and we loved them. I’ve never made them on my own but you have encouraged me to try my hand at them. Your method of cookies and your personality embodies soooo much more of our culture and heritage than you realize. My mom never taught me anything I was out of the house at 14. You're such a wonderful cook and I'm gonna try your dishes. Especially this one. You should have a recipe book out there I certainly would purchase it. I don't subscribe to many things but you have my vote.

I ate puffy tacos in San Antonio for years, growing up: these are NOT like those…they are so much BETTER!!! The filling is HEAVEN! I served mine with some grated cheese, guacamole salsa, shredded cabbage and cilantro. Y’all have GOT to try these! Thanks so much for creating this recipe!

I made these today with my own variations and I made flour tortillas, like Indian Fry Bread. I filled in a tortilla with the filling and added a lime cremosa! It’s so GOOD!! Thank you Rachel! This was an amazing dish. Something different from regular tacos. I made some white and dark red kidney beans with some of the seasonings used for the chicken. Sabrosos 😋🥰🌮
I have two cooking challenges I want to master this year and both were the best when I visited San Antonio. One was puffy tacos and the other the best albondigas that I ever had. ANY TIME I'm wanting great food with authentic Mexican flair I always hit up your channel. This is definitely a keeper too! I love your chicken seasonings, I too much prefer well seasoned filling as opposed to bland and you never disappoint! I've been making puffy taco shells this way for 40 years for all my tacos as that's how my mama learned, taught me and how I taught my daughter's! They're absolutely the best! I love your videos because you speak slowly and tell exactly what you are doing. Everything you make is so delicious and I have made many of your recipies. I have my brother and sister in law from Texas coming to visit in a week and this will be something I will make for them. The tradition is still going strong at the same location!!! We have the same vintage Jukebox, back then it cost a nickel per record. You need a live cooking show with an audience and I would love to be one of your first guest(testers 😊). Your recipes are fantastic and I've made many. I keep them and am compiling a cook book (with references) in hopes that these new generations know what great, better EXCELLENT, home made food is pretty easy and they ARE capable of learning. My mom had my siblings and I cooking by the time we were 5-6 years old and we all still love to be in the kitchen. Dad doesn't understand, but he's likes going out to restaurants more and more in his later years anyway. Thank you and I hope you get the credit you deserve for all the time you put into your videos that are so very teachable. Kind remind me of my abuelita and tias in the kitchen growing up. ❤
I'll take your delicious puffy tacos over the famous Henry's Puffy Tacos here in San Antonio anytime. Que delicia! Those look absolutely wonderful and thank you for answering the question I've always had on how to make the corn tortilla puffy. This truly is one of those recipes that may take some time but the results are so worth it. Think I'll be brave this week and try making these. I had a tortilla press like you have. Unfortunately it was stolen when i moved. I had help and one of the people thought they needed it more than i did. I used it to press dough to make fruit pies cause i have problems with my hands. I so enjoy watching you cook.

Rachel I've tried your recipe. They're awesome. I took the temperature of the oil with a candy thermometer. I find 325 to 350 works great! I want to make puffy tacos for a small dinner party. Can I cook the shells about an hour or 2 ahead of time. I would try to warm them on the oven. What do you think?
Hi, thank you so much for your question, I've never made the shells ahead of time and used them later, but I think it should work, don't think an hour or two should hurt, just keep them on a rack so they dont touch the paper towels or they'll get soggy...if you warm them up do it in the oven on low heat so as not to burn them, I'm so happy to hear that you liked my recipe my friend, let me know how it turns out and thank you so much for your comment and support of my channel. ❤

Oh my gosh! I've been making puffy tacos for years and didn't even know they were a thing! About seven years ago I invited family over for my tacos, (my family loves my tacos because I make my own shells). This particular little party though, I didn't remember to get the corn tortillas from our local tortillaria at Cardenas, when I got the rest of my ingredients. I had all I needed to make flour tortillas, so decided to make the tacos using flour tortillas. I was concerned though because everybody likes the crunchy corn shells, so I decided I'd just fry them like I do my corn tortillas. Everybody arrives. I apologized and explained what happened. All were in agreement that flour tortillas would be excellent fried for the tacos. I go in and got my dough that had been resting, and started the balls, then pressing them into beautiful flat tortillas. My oil was ready so I started with my first tortilla. I dropped it in the oil but wasn't really prepared that it would puff up, because I was in corn tortilla shells brain mode. I pressed down the middle thinking that would cause the he air to be forced out, but it didn't. It just got beautifully puffed and crunchy. I thought that was just the "tester" shell and dropped the next tortilla in the oil, the same thing happened. With the fifth tortilla I called out, "Oh no family! I think I ruined taco night!" My brother came in the kitchen with his wife, then my niece and her husband, my daughter and her boyfriend, my brothers kids didn't care they were playing games outside. I looked up at everyone and their eyes were all smiling happy! I just said I'm so so sorry! Everybody says why? Those are going to be awesome! They filled up nicely, as we went around the table with the taco fillings. They were a hit! I had to get up and make another full batch of tortillas, (good thing when I make flour tortillas I make double or triple batches). The best thing is they are so quick it takes no time at all to fry them up and the dough was already good to go😁. 48 tacos were consumed that night! Now when everybody is craving my tacos they call and ask when taco night is happening? I'll make a date. My brother always calls back and says, "Sis, can you do half and half? Half corn shells and half oops shells?" Or I'll call them and tell them all "oops taco night on....." 😁😁😁😁 I thought I had made a mistake, but seeing this it turns out I didn't and can be proud of myself that I accidently took family taco night to a new delicious level. And thus Dee's Oops family taco night was born. Now I'll call Puffy taco night, though I don't think they'll let me change it to Puffy 😁
I love puffy tacos. I first had them at “Rey’s “ in San Antonio about 30 years ago. I understand he was the first to sell those tacos in SA . I’m anxious to try your recipe. It looks as good as “Rey’s “. Thanks for sharing. 👍

Rays is a distant memory! I can still smell the hot grease as I pull up into the corner lot where Ray's sits in San Antonio on a hit summer day. Opening thise bug doors into dimly lit dining room, walking over to tge order counter and placing my order for a huge order io puffy tacos!!! I miss that ! So I'm paying attention. Getting the tacos to puff is an ART and they've " secret special" tools to flip but it's actually tongs. Crisp, light, crunchy! I'm drooling.
You should probably rethink the plastic utensils while you’re frying the tortillas. If you’re in San Antonio, go to a restaurant supply store and buy spatulas and spoons that are made of stainless steel…
Cook's tip: put cooked chicken in mixer bowl. Use paddle attachment. Will shred chicken rapido. It'll even work with a handheld mixer In about one minute. Thanks for the recipe i'm gonna try it

Looks very yummy. I will be trying this with ground beef taco meat. But here is a real helpful hack to help shred the chicken for those of you who are the chicken lovers. After deboning the chicken, put the chicken in a stand up mixer ! like a Kitchen Aid) and put the paddle on and let it shred the chicken for you. No bones allowed please!
I love watching your videos and everything looks so good! I don’t have the press to press out the tacos,but I can just roll them out I guess. I have to watch my sodium also, so it kind of makes it hard for some of the recipes. You are the best I’ve ever seen on cooking videos
