In this video you will learn how to cook a pork butt on the Weber Smokey Mountain along with figuring a typical amount of yield you will get from that pork butt.
We smoked a pork butt low and slow, weighing it before and after cooking. This will give us our yield. (Final Weight/Beginning Weight) * 100 = %yield.

I aways cook fat down and I always cover with mustard before adding rub. Mustard helps hold rub and the vinegar in it helps tenderize.

I’ve tried binders in the past and haven’t noticed a big difference. But I’ve been using mustard on my briskets more lately.

I’m usually 60-65% on my yields. I notice the lower the temp of the cook the higher the yield.

Yep! It’s on the schedule in the next couple of weeks. I will do a prime and a choice brisket and figure out yields of both.

I actually bought a custom 120 gallon offset, so I sold the char grilled to a friend of mine. It’s a great grill, I just outgrew it and needed something bigger.
