I made a rich and creamy pumpkin cheesecake with ginger biscuits as the base. The ginger and cinnamon flavours complement the pumpkin well. I recommend using ginger biscuits if you can find them!
Ingredients:
(15cm)
70g ginger biscuits
35g unsalted butter
250g cream cheese
60g white sugar
20g brown sugar
2 eggs
120g heavy cream
250g pumpkin puree
1/8 tsp cinnamon
1/2 tsp vanilla
10g cornflour
Whipped cream
Cinnamon powder
Bake at 170°C for 25mins, 160°C for 20mins
