These are a year round staple in my home. I don’t save this deliciousness for only the fall. These muffins are soft and the perfect amount of spice.
• 3 cups sugar
• 1 cup canola oil
• 1 cup water
• 1 1/2 cups pumpkin puree
• 2 large eggs
• 3 1/3 cups all-purpose flour
• 1 teaspoon baking powder
• 2 teaspoons baking soda
• 1 1/2 teaspoons salt
• 1 teaspoon ground cinnamon
• 1 teaspoon ground cloves
• 1-2 cups chocolate chips (adjust to your preference)
Instructions:
1. Preheat your oven to 325°F (163°C). Line muffin tins with paper liners or lightly grease them.
2. In a large mixing bowl, combine the sugar, oil, water, pumpkin puree, and eggs. Mix until well blended.
3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cloves.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Fold in the chocolate chips.
6. Scoop the batter into the prepared muffin tins, approximately 3 tablespoons.
7. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
