The thing you need to understand is that at all times, Israel is facing the imminent threat of extermination, so that whatever they may do, even it if appears to be abusive, illegal, and overly violent, is only done to protect their people against genocide. So that any criticism of anything that they might do, you are actually advocating for the eradication of the Israeli state, even if you don't realize it yourself.

I would be fine with some clean criticism of war methods, but when it's straight to "river to the sea" and "gas the jews" for the marchers and students, you will find that a lot of people get uncomfortable. Still no marches for the expulsion of almost 2 million afghans from Pakistan or for Syria, Yemen etc. No jews involved there, so nothing to see here.

As when it comes to universities, well usually they don't teach anyone hands on they just hand out materials and you form your own opinions... and since the documents have been declassified(primarily the British ones) the narratives Israel have been pushing for many decades no longer fit, unless you are so biased that you refuse to draw other conclusions. That's why we see this generational gap, younger generations have access to more, previously classified information... which changes the context of the conflict. Not to mention there's massive differences in how young people view the world compared to those who grew up closer to the end of WW2 and during the war on terror.
