Canada took the 1¢ coin out of circulation some years ago. I saved a large tin of them and use them for blind-baking. They are heavy enough that I get no issues with the pastry wanting to bubble up. I love a good quiche!

A classic NZ recipe for picnics is bacon and egg pie. Very similar to this quiche. I throw in a handful of baby green peas so there is a vegetable! Cold out of the fridge a slice is soooooo delicious. Thanks John for sharing this recipe.

Dear John, what a delicious looking quiche….I can smell it all the way in Canada lol, I just love a good quiche and make it fairly regularly, we really enjoy it, we can’t get the lovely cheese here in Canada so Parmesan is our go to for a nice stronger flavour. Hi John! I love your recipes and you make the most delicious pies. Quiche is always a firm favourite for us in this house! I was wondering if you have made any scotch pies at all. I have always been afraid of making them and pork pies, (but I think I may muster the courage to make pork pies) however my favourite pie of all time (other than a mere recent fave being the Kiwi/oz classic - a cheddar beef pie yummy)has to be the classic humble scotch pie. I was put off them some time ago when someone told me (“on good authority”) that they were made from offal. I have recently learned that they were actually made, traditionally, from mutton. So much time wasted on misinformation. So, if you have made them please share a link for me. If not….PLEASEPLEASEPLEASE 🙏🏻🙏🏻🙏🏻

Nice recipe, just to point out a typo in your temperature note in the middle of the vid, the gas MK 3 changed to a gas MK 5 and then back to Gas MK 3 for the final bake, like the pork pie pastry.

High John, never found a recipe of yours that didn't work out beatifully. Now, the Missus is the quiche fan in our 'ouse so, can these beauties be frozen as I'd need to store some - that recipe looks good with those quantities and I wouldn't want to meddle! And...is there any secret to getting them out of the tins? - they look robust as its h.w.pastry but I don't want any 'surprises' lol.

I bought one for when baking with my granddaughter, at 3 yrs old she can be a bit heavy handed with the rolling pin but this ensures a uniform depth. I use it myself now, it takes the guess work out of it…Happy baking!😉

John, I don't want to be petty, but when you turn the pastry it's 90 degrees, not 45 degrees! Also, when you give oven temperatures (e.g. 170C) could you say whether it's a fan or non-fan setting? Apart from that bit of nit-picking, this recipe looks excellent and is likely to be made in out house sometime soon!
