Here’s a simple recipe for **caramel pudding**:
Ingredients:
#### For the caramel:
1/2 cup sugar
2 tablespoons water
#### For the pudding:
2 cups milk
4 tablespoons sugar
2 tablespoons cornstarch
2 eggs
1 teaspoon vanilla extract
Instructions:
#### Caramel:
1. In a small saucepan, add sugar and water. Heat on medium flame without stirring until the sugar dissolves and turns golden brown.
2. Quickly pour the caramel into a pudding mold or ramekins, tilting them to coat the bottom evenly. Set aside to cool and harden.
#### Pudding:
1. In a mixing bowl, whisk together eggs and cornstarch until smooth. Set aside.
2. In another saucepan, heat milk and sugar over medium heat. Stir continuously until the sugar dissolves and the milk is hot (but not boiling).
3. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
4. Return the mixture to the saucepan and cook on low heat, stirring constantly, until it thickens (about 5-7 minutes).
5. Remove from heat and stir in vanilla extract.
#### Assemble:
1. Pour the pudding mixture over the hardened caramel in the mold.
2. Place the mold in a larger baking dish filled with water (to create a water bath), and bake in a preheated oven at 350°F (175°C) for 30-40 minutes or until set.
3. Let it cool to room temperature, then refrigerate for at least 2 hours.
#### To Serve:
Run a knife around the edges of the pudding, invert it onto a plate, and enjoy!
