I like to roast the courgettes for an hour, 180 degrees, before adding them. I also add garlic, half a tea spoon of turmeric, fenugreek powder and paprika to the pan before adding the water. Comes out great.
I had 3 Courgettes in my fridge. I knew they would get thrown out if I didn't find a recipe. I saw this Video. The soup is made and I am stunned. This is my new best friend. Thanks for this.
Gemma, have you ever tried Bouillon? It's available at Tesco. It's a more natural veg stock powder. Much healthier than tradional stock cubes that can be very high in salt and have hidden nasties.

technically courgettes are meant to be zucchinis, but just before they have completely grown....once grown full size, they are zucchinis :) but they are pretty much the same thing, and australia and america just normally call both zucchinis.
I tried something similar last week but I think without the blender it just does not really work. I stopped using stock cubes because of the amount of salt in them. I have replaced salt in most things with crushed garlic, pepperoni and other spices.

Courgette by itself is rather tasteless. When finished I add egg and pecorino cheese, Italian style. It makes it yummy in an instant. Italians don’t do vegan (a waste of time) .. so now you know. Veganism is an unrealistic woke hype.
