Quick Pickled Beets
2 cans sliced beets-drained (save juice)
Heat beet juice and add:
1 cup apple cider vinegar
1/2 cup sugar
2 tablespoons pickling spices (tied in a piece of cloth)
Boil liquid mixture 5 minutes.
Pour hot liquid mixture over beets (including the pickling spice bag).
Cover and refrigerate (after mixture has cooled) 2 days before serving.
Will keep in refrigerator 1-2 months.
