Ingredients:
- 2 eggplants
- 2 eggs
- 50g yogurt
- 80g all-purpose flour
- 1 tomato
- Parsley
- Black pepper
- Salt
- Vegetable oil
Instructions for making fried eggplant:
1. Slice the eggplants thinly and soak them in salted water for about 10 minutes.
2. Beat 2 eggs, add 50g of yogurt, salt, black pepper, and all-purpose flour, then mix well.
3. Drain the eggplants and pat them dry.
4. Heat vegetable oil in a pan.
