The authentic South Indian lemon rice do not have garlic in it. Authentic recipe has fried peanuts, green chillies, mustard, split urad dal, yellow split lentils (which gives a crunchy bites and more tasty) dry red chillies, hing, lemon. The South Indian lemon rice is simple yet flavorful. Do try the authentic version as well as u ll like it. U need to make it morning if you want to eat it in the evening. Give it some time to rest as the rice will get soaked with the lemon juice and becomes more tasty.
it is her choice and I have no issues with that. But I m just letting her know the authentic South Indian style lemon rice which will be yummm if made in the right way. Hope @dipika tries the authentic version.
Loved this video:) . A Kesar tip for you - (my grandma's tip) the kesar strands need to be very gently dry roasted (just 20 sec on low heat) n cooled down . Once they cool, they crisp up and can be hand crushed and turned into a coarse powder . Then add it to the dish instead of soaking the strands . I have tried this, it works.
For your kesar colouring doubt: It's a simple science phenomenon that when we add a lot of solute in small amount of solvent the concentration of the solution increases and vice versa.
Always mix kesar in 2 3 spoons of water and keep it aside for some time rather than mix kesar directly in milk.. when we put kesar into water it give darker colour and more test of kesar and then pour it into kheer, rabdi, etc.. try it ones.😊😊 lol ❤️

True... Garlic doesn't go into curd or lemon rice... Plus lemon rice is not gonna last for days but for overnight journeys it's made normally... Anything sour can stay overnight...
Exactly..curd rice can have ginger in tadka but not garlic, and another tip is to use less curd more milk , it will can last long during the day and won't go that sour considering mumbai weather
True ,garlic doesn't go in curd rice.instead mash rice with grated ginger ,green chilly n some curry leaves with your hands .that gives spl taste then add curd n a little milk

Mam Garlic is not used in both curd rice and lemon rice down south. Instead ginger can be used. Also for lemon rice tempering peanuts can be used. Hing can be used for both rice.

Hum south indian end our meal with curd rice so it's usually in our menu... And I love it everyday. Good for the stomach too... Yes we might not temper it everyday but yeah Occasionally. But thank you for sharing lots of luv and hugs.

Also in lemon rice you can avoid garlic . When you frying all the ingredients you can use ghee instead of oil. It blends well with rice. Just what my mother taught me I am sharing with you. Please do not take me otherwise. 🙏
@@aparnarau true that but it moves the originality of the food. Just telling it due to my deep rooted connection to lemon rice and curd rice since 30 years of my life. It's a daily food item at home of a South Indian. As I mentioned earlier that I am sharing only something which was taught to me by my mother and then my mother by her mother.

Don't eat lemon rice n kheer together. Keep a gap of an hour. Nimbu n doodh not to be taken together always remember. Not good for stomach. Soaked saffron intensify the colour of water or milk as u soak. If we put immediately vice versa. Hope u understand. Ek heart ❤ toh Banta h. Kabhi nh dete aaplog.

Kesar quantity is reason, if u add 15 strands in small bowl of milk, color will be dark, but in big utensils adding 15 strands won't give the same color coz of quantity.

As a South Indian curd rice is a staple food for us and lemon rice is also very usual n common for us but sorry j did not like ur recipe.. Garlic is a complete no to curd rice as it's a mouth freshener for South Indians.. But end of the day it's ur choice how you like to eat any dish 🙂
