Rabri doodh, also known as rabri, is a rich and creamy traditional Pakistani sweet dish made with milk, sugar, and cream. The name "rabri" comes from the Urdu word "ربڑی," which means "condensed milk.
Thick, creamy milk is sweetened with sugar and cooked then chilled before served.
Ingredients:
- 1 liter full-fat milk
- 8 tablespoons sugar
- 2-3 cardamom green
- 3 tablespoons soaked goondh katira in a cup of water over night.
- 2 tablespoons soaked basil seeds into a cup of water.
- 2 tablespoons soaked isabgol husk into a cup of water
Instructions:
1. In a large saucepan, heat sugar 4 tablespoons until golden syrup & well caramelised then add milk over medium heat until it starts boiling.
2. Reduce heat to low and simmer for 10-15 minutes, stirring occasionally, until the milk thickens and reduces slightly.
3. Add remaining sugar & cool down on room temperature.
4. After cool add soaked goondh katira, basil seeds, isabgol husk & stair well.
5. Let cool to room temperature, then refrigerate until chilled.
