Here is a very special Holi Recipe - Raj Kachori! We usually do not make Raj Kachori at home but on very special occasions. The Raj Kachori is a puffed, crisp kachori that is stuffed with boiled potatoes, boiled chana, boiled sprouted moong and chutneys and served topped with sev and pomegranate seeds.
The Raj Kachori is usually enjoyed when we go out to eat a chaat shop or at weddings but now you can enjoy Raj Kachori at home too!
I have also shared with you the trick to get the perfect thick yoghurt just like the chaat walas!

Recipe :
Raj Kachori
Prep time: 20 minutes
Cooking time: 20 minutes
Serves: 4-5 people
Ingredients:
For the dough:
2 cups Rava
1 cup Maida
Salt to taste
Warm Water as required
2 tbsp hot oil
Turmeric powder ½ tsp
For filling:
1 cup Besan
1 tsp Red chilli powder
Salt to taste
½ tsp Baking soda
1 tbsp Oil
4 tbsp Water
Method:
Mix the rava, maida and salt to taste in a bowl. Add the hot oil and mix.
Mix turmeric powder & water and add the mixture gradually to the dry ingredients until the dough feels soft initially.
Knead for 4-5 minutes to a semi soft dough.
Cover the dough with a damp cloth & rest for 10-15 minutes.
To make the filling, add all the ingredients in a bowl and mix well, keep aside to be used as a filling to make the raj kachori.
Knead the dough for another minute. Divide in equal size dough balls, and shape a dough ball like a small cup with your thumb & index finger, fill the small cap with a small spoonful of the besan filling, bring the ends together and seal to make a ball.
Flatten with hands and coat with dry flour, further use a rolling pin and roll in thin puri.
Heat oil for frying, fry the kachori in hot oil on medium high flame. while frying, push down the kachori with the spatula so it fluffs up, flip the kachori and splash hot oil over it so it fluffs like a balloon and fry from both the sides until crisp & golden brown.
To serve:
Break the top of the kachori. Fill in boiled potatoes, boiled chana, boiled moong sprouts, sweetened yoghurt, sweet chutney, green chutney and top with chopped onions, sev, pomegranate seeds, and serve.
